Deb...we have a restaurant in Omaha "The Spaghetti Works"...neat old place built inside an old factory.

When we go there I always order some Bruschetta...their's is so good.

I shoulda told ya it was good...

I love it too. I make it often using diced tomatoes, lots of garlic, Italian parsley, and olive oil. Sometimes I add a bit of onion but not usually. I usually just toast pieces of sliced baguette and then rub a clove of garlic on both sides or sometimes I press garlic into the olive oil and then brush the mixture on the baguette slices and then toast it. Top with the tomato mixture and a sliver of parmesean cheese and put it under the broiler for a minute to melt the cheese a bit. I sometimes add a splash of red wine vinegar to the tomato mixture.

Oh, it's the best! I make my own. Very easy. Chop up tomatoes, garlic, basil and, if you like it, cilantro. Mix in the olive oil and a tad of blk. pepper (opt). Put it on toasted slices of french bread and chow down! Sometimes I add chopped red onions. My friend adds a touch of parmesan cheese to the bread before toasting it. Another friend chops up black olives.... So many different ways to enjoy it and they're all great.

Spread on bruschetta, then stawberry jam and a sprinkle of black pepper!

Glenda-You spread strawberry jam on the bread then top with the tomato mixture? Never heard of that.Don't know if I would like jam with a tomato mixture.I am kinda weird though about food combinations.LOL
Never had goat cheese.My sis told em she tried it and loves it so maybe I would too.

I knew I was forgetting an ingredient! I don't like basil all that much but I do use it when making the brushetta - just not very much. LOL

Actually, I'd be a poor one to try ... for I didn't even know what it was, until I read the descriptions above, let alone be able to give you any kind of descriptioon or recommendation.

Bruschetta can be used many different ways.
It IS toasted Italian bread cut into slices.

Not exclusive to tomatoes.

This is what I AM MAKING!

Strawberry Preserves and Goat Cheese  Spread toasted bruschetta with softened goat cheese. Top with strawberry preserves. Sprinkle preserves with freshly ground black pepper.

And to add I DO make this and serve at parties!

Caprese Bruschetta

1 loaf, fresh Italian bread
Extra virgin olive oil
3-4 fresh roma tomatoes
1 lb. fresh mozzarella cheese
Fresh basil leaves
Salt & pepper, to taste

Really and truthfully, it is really just what ever you personally want to put on it....you can even do grilled veggies like eggplant...It's really just a piece of toasted bread that you dress up. I love it but it's the crunchy bread as well as the toppings that make it good.

Bruschetta is the bread??? I thought it was the tomatoes,at least in the recipes I found online it is.
Don't matter...I like it no matter which it is.I made mine with tomatoes,olive oil,garlic,basil,oregano,parsley,salt,pepper and a dash of balsamic vineager.WONDERFUL! I even cheated and bought a bag of bread already toasted! LOL! It was parmesan and herb flavored and delicious! I also bought some toasted bagel slices and they were great too!

Sorry if you were offended by my question Glenda.Bruchetta is toasted Italian bread with olive oil and garlic rubbed on it.The only Bruchetta I have eaten was with the tomato herb topping.That is what everyone was talking about here and why I asked the question.My mother always told me,"You never learn anything if you don't ask questions!"

I'm not offended, lilliepad, but I do have knowledge of what to use with what.
I buy my bruschetta at Fresh Market. With olive oil and garlic or just toasted.

Hmmm I made a fresh batch this morning to go with parmesion chicken and fried zuccinni for dinner tonight. Maybe my neighnors Lemon herb roasted chicken and then making them rosemary grilled potatoes to go with...and a salad....hope they love it....stacy
