Antique quilt tops....how do I finish them?

I just aquired 3 quilt tops that were made by my great grandmother (I am fairly certain they date to before 1900). Two are just tops and one has the batting and backing tacked on but not stitched yet. I really want to finish these quilts that were so lovingly started by my ancestors, but I don't know where to start. The fabric is in pretty good shape, other than some yellowing. They are hand-stitched and I want to finish them that way. Can you help me? Point me in the right direction? These quilts are priceless to me and I want to do the best thing for them. Thanks.
