If you want something a little different, you might like this recipe. I use to make this peanut butter and chocolate cookie tart all the time to take to the school bake sales when my son was young. The teachers would buy up the trays before they ever made it too the bake sale table. I'm not a peanut butter fan, so I've adapted the recipe over the years to make a shortbread cup for the chocolate filling. This is what the cookie looks like as the shortbread version. The peanut butter version looks the same except the cookie dough is a more golden brown. Home Cookin Chapter: Recipes From Thibeault's Table Peanut butter and chocolate cookie Tarts ======================================== Dough 3/4 cup butter 3/4 cup peanut butter smooth 3/4 cup brown sugar 3/4 cup white sugar 1 egg 1 egg yolk 2 tsp vanilla 2 1/4 cups flour 3/4 teaspoon baking soda Chocolate filling 4 oz semisweet chocolate 1 Tablespoon Milk 2 Tablespoons cocoa 1/3 cup butter 2 cups sifted Icing Sugar . Cream butter with peanut butter until very smooth. Beat in sugars. Beat in egg and yolk. Add vanilla. Sift flour with baking soda and mix well. Stir into butter mixture. Press balls of dough into well buttered mini muffin tins. Each ball of dough should be about 3/4's the size of the muffin tin - when you intent the centre it should form the shape of a pudgy little tart shell. Bake in preheated 350ðF oven for 15 minutes or until outside is baked but inside is still chewy. Do not over bake. Cool five minutes on rack and then remove from tins. Cool completely. Filling Combine chocolate, cocoa, milk and butter in small saucepan. Melt over low heat. Mix until smooth. Cool. Beat in icing sugar to give consistency of icing. Pipe about 1 tablespoon of filling into each tart. Note: YOu can spoon the filling in to the centre, but it looks nicer when piped.

Yes minirose---I would only give them a hot water bath for 5 min.. 20 minutes would cook the cabbage and make it limp. You only want to seal the jars not cook the contents. Often I don't even water bath pickles. I meticuously wipe the jar tops with damp paper towel and always use new snap lids and if they pop and go concave the jar is sealed. In all the many years I've been canning I can count on one hand the number of jars that have spoiled and they are usually jars that are old. I do raw pack tomatoes and hot water bath them for 35 minutes and the tomatoes boil and cook in it. My quarts of tomato juice with the contents cooked calls for 10 min.

I found this in an old cookbook my mother used from the 40's. I'll post it with the original recipe & the variation following. FUDGE 2 cups sugar 1 or 2 squares chocolate 1/8 tsp cream of tartar or 2 TBL corn syrup 2/3 cup milk 1 tsp vanilla 2 TBL butter Mix the sugar, milk, grated chocolate, cream of tartar or corn syrup & boil rather slowly, stirring until the ingredients are well blended. Boil to the soft-ball stage (238°.) Remove from the stove, add the butter but do not stir it in. When lukewarm, add the vanilla & beat until it creams; that is, until the shiny appearance disappears & the fudge will hold its shape when dropped from the spoon. Spread it in a buttered pan & when it hardens mark it into squares.~~ **Peanut butter may be used instead of chocolate, using 2 TBL of the butter to each cup of sugar in the recipe. Like butter or other fat, it should be added after the fudge is cooked.~~

I don't use the honey or cinnamon in this recipe. It's really good and since I love the "relish" I always double the amounts. Sweet Potato-Coconut Soup with Spicy Relish Spicy Relish: 1 T canola oil 1 T unsalted butter Pinch of red pepper flakes ý small sweet potato, peeled & cut into a small dice Salt and fresh black pepper ü cup finely chopped fresh flat leaf parsley Heat oil & butter over medium heat. Add red-pepper flakes; heat for 10 seconds. Add diced sweet potato, salt & pepper. Cook, covered, stirring occasionally, until softened, 15 minutes. Uncover, increase heat to high & cook until diced potatoes are golden brown, 5-7 minutes. Transfer to a bowl; stir in the parsley. (I like diced potato to get a bit crunch). Soup: 1-1/2 T canola oil 1 small red onion, chopped 2â piece of fresh ginger, grated Pinch of red pepper flakes 3 cups chicken broth ý cup water 1-1/2 lbs sweet potatoes, peeled & cut into a large dice 1-1/2 cups unsweetened coconut milk (light version if you prefer) 1 T clover honey Large pinch of ground cinnamon Heat oil in saucepan over medium heat. Add onion and ginger; cook until soft, 5 minutes. Add red-pepper flakes and cook for 30 seconds. Add broth and water; bring to a boil. Add sweet potatoes; bring to a simmer. Cook until potatoes are soft, 20-30 minutes. Cool for 10 minutes. Use immersion blender to puree. Simmer over low heat. Whisk in coconut milk (or alternative), honey, and cinnamon. Cook until thickened and warmed through. Season with salt and pepper. Ladle into bowls; top with a spoonful of the spicy relish. Serves 4.
