LOOKING for: ground chicken recipes

HAve any great ones? Not burgers or white chili. I've tried subbing it in my regular chili and my meatloaf, and so far don't like it in those. Looking for something maybe more original, not just used as a ground beef substitution. Something that would complement its more delicate flavor. Thanks!

Here's one I highly recommend (from our own doucanoe (Linda)).

SPICY CHICKEN CAKES WITH HORSERADISH AIOLI

CAKES:
2 slices whole wheat bread
1 lb. skinless, boneless chicken breast
1/4 cup chopped fresh chives
3 Tblsp. low-fat mayonnaise
1 tsp. Cajun seasoning
1/4 tsp. salt
2 large egg whites
2 tsp. canola oil

AIOLI:
2 Tblsp. low-fat mayonnaise
2 tsp. prepared horseradish
1 tsp. bottled minced garlic
1/8 tsp. salt

To prepare cakes, place bread in a food processor; pulse 10 times or until coarse crumbs measure 1 cup (discard remaining breadcrumbs). Set breadcrumbs aside.
Place chicken in food processor; pulse until ground. Combine chicken, chives, 3 Tblsp. mayonnaise, seasoning, 1/4 tsp. salt, egg whites, and breadcrumbs in a medium bowl; mix well (mixture will be wet). Divide mixture into 8 equal portions, shaping each into a 1/2-inch-thick patty.

Heat oil in a large nonstick skillet over medium heat. Add patties; cook 7 minutes on each side or until done.
To prepare aioli, combine 2 Tblsp. mayonnaise and remaining ingredients in a small bowl. Serve with cakes.

Yield: 4 servings (serving size: 2 chicken cakes and about 1-1/2 tsp. aioli).

Linda's notes: The patties are really loose prior to cooking and fall apart easily once cooked. I would use a little more chicken next time around.

How about a Chicken Stroganoff? Sorry, it is a substitute for ground beef, but is equally delish.

chopped onions
sliced mushrooms
ground chicken
canned chicken stock
dijon mustard (optional)
hot sauce (optional)
salt and pepper to taste
sour cream or plain yogurt
worcestershire sauce (optional)

Serve over noodles, rice or potatoes. Yum!

Here are a few to get you started: Poor Man's Salami 2-21/2 lb ground venison 1 cup water 1/2 tsp each garlic powder, onion powder, mustard seed 2 tbls liquid smoke 3 tbls Morton's Tender Quick salt Combine all the ingredients and form the mixture into two 8-inch long rolls. Wrap in foil with the shiny side next to the meat. Refrigerate for 24 hours. Pierce the foil in several places on the bottom side of the roll with a toothpick. Place the rolls on the oven rack over a pan containing 1/2 cup water. Bake at 225 derees for about 2 hours. Venison Breakfast Sausage 4 lbs ground venison 2 lbs ground pork 1/2 Burgundy 1tsp garlic powder 2 onions, liquified in blender 4 tsp basic smoke salt* 4 tsp marjoram 3 tbls mustard with horseradish 1 tbls pepper 2 tsp sage 1 tsp cayenne pepper 1 tsp thyme 1 tsp ground nutmeg 3/4 tsp rosemary Combine all ingredients well. Form into patties and fry. Or stuff casings to make breakfast links. *Basic Smoke Salt This is a seasoned salt mixture I devised years ago for smoking meats. It's a great general seasoning salt as well: 1 package table salt (1 lb 10 oz) 1 tbls onion salt 2 tbls celery salt 1 tbls garlic salt 2 tbls paprika 4 tbls white pepper 2 tbls dill salt 4 tbls white sugar Combine all ingredients and store in an airtight container (canning jars work great) Spicy Game Sausages 1 3/4 lb venison or other game meat, ground 1 3/4 lb pork, ground 1 tbls smoke salt 2 tsp chili powder 2 tsp black pepper 5 garlic cloves, crushed 2 tsp rubbed sage 1/4 tsp ground allspeice variations: 1 tbls curry powder 2 tsp cumin seed Combine all ingredients. Stuff into casings or make into chubs. For people with dietary restrictions forbidding pork, this next is particularly suitible. Scott Darrohn's venison sausage 4 lb venison,ground 1 lb beef fat 2 tsp salt 1 tsp black pepper 1/8 tsp cayenne 2 tsp ground sage 1/2 tsp ground allspice Combine venison, beef fat, and seasonings and pass through meat grinder. With hands, shape; meat into 4-ounce patties. The sausage can be prepared any way you like it, or frozen for later use. This next is reminescent of Boudin sausages, but actually has a totally different flavor: Venison & Potato Sausage 10 lbs ground lean venison 10 tsp salt 2 tsp pepper 10 lbs ground raw potato 3 lb ground raw onion Sausage casings Grind meat, potatoes and onions separately first, then mix all together with salt & pepper and put through meat grinder a second time. Fill sausage casings by hand or with a sausage stuffer attachment on your meat grinder. Tie off or twist sausage into individual links or leave whole. Do not pack casings too tightly or they will burst when cooked. Wrap in meal sized packages and freeze. To serve, punch a few holes in the casing to release pressure as the sausage expands while cooking. Put frozen sausage in boiling water and let simmer for 45 minutes. If preferred you can add up to 3 lbs ground pork to the mixture before stuffing the casings. BTW, if all you have is ground meat, that's fine. But if you're starting with whole cuts, it's best to spread the herbs and spices on the meat before grinding. Then double grind the meat. This assures that the herbs and spices are evenly distributed throughout.

I've never eaten at a Ruby Tuesday's restaurant, but this chicken pot pie recipe is a family favorite here. I've used the filling for pot pie, shepherd's pie and also served it over rice. * Exported from MasterCook * Country Chicken Pot Pies Recipe By :Southern Living Do-Ahead Cookbook Serving Size : 8 Preparation Time :0:00 Categories : Tested and Approved Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup chopped celery 1 cup chopped onion 1/3 cup butter or margarine -- melted 1/2 cup all-purpose flour 2 cups chicken broth 1 cup half and half 4 cups cooked chicken -- chopped 2 cups frozen peas and carrots -- thawed 1 teaspoon salt 1/2 teaspoon pepper Saute first 2 ingredients in butter in a skillet over medium heat until tender. Add flour; stir until smooth. Cook 1 minute stirring constantly. Add chicken broth and half and half; Cook, stirring constantly, until thickened and bubbly. Stir in chicken, peas and carrots, salt and pepper. To prepare pastry mix flour and salt. Cut shortening into flour till the size of peas. Add water 1 tablespoon at a time and mix gently. Divide basic Pastry into 8 equal portions. Roll 4 portions of pastry to 10 inch circle on a floured surface. Place in four 6 inch disposable pie pans. Divide chicken mixture over pastry in pans. Roll remaining 4 portions of circles over filling; fold edges under and flute. Cut slits in tops to allow steam to escape. To Freeze; Cover tightly and freeze up to 1 month. I thought I had one like it but didn't, so I looked for over a hour and found this one. You can change it a bit and maybe it will work out. Overnight Chicken noodle CASSEROLE: 2 cups cubed cooked chicken 1 (9 oz) pkg frozen mixed vegetables, slightly thawed 2 cups uncooked elbow macaroni (or noodles) 4 oz (1 cup) shredded American cheese 1 can condensed cream of chicken soup 2 cups water (or broth) TOPPING: 1/2 cup plain bread crumbs 2 tablespoons margairine or butter, melted 1 In large bowl, combine all casserole ingredients; mix well. Pour into ungreased 8-inch square (1-1/2 quart) baking dish. Cover tightly; refrigerate 8 hours. 2 Heat oven to 350 F. In small bowl, combine topping ingredients; mix well. Stir casserole; sprinkle with topping. Bake at 350 F. for 45 to 55 minutes or until bubbly and golden brown. Hope this works for you, I may try it myself :)

Ruthanna, Here is a rather "dressy" chicken liver recipe I cut out of the Boston Globe a number of years ago. I made it once, and my husband almost swooned! I'll type it just as it appeared. JOE SIMONE'S CHICKEN LIVERS COOKED IN MILK "Joe Simone of Tosca restaurant in Hingham soaks chicken livers in milk for a couple of hours before sauteing them in oil. He says it tenderizes the livers and gives them a cleaner flavor. To them he adds apricots, dates, and other dried fruits soaked in the Italian wine vin santo, plus pancetta and onions." 1/2 cup dried apricots, snipped into thin strips 1 cup whole pitted dates 1/4 cup golden raisins 2 tablespoons currants 1 cup vin santo (Italian dessert wine) or another sweet wine 2 pounds chicken livers 2 cups whole milk Kosher salt and fresly ground black pepper, to taste Flour (for dredging) 1/2 cup olive oil 2 slices (1/4 inch thick) pancetta, coarsely chopped 2 onions, coarsely chopped 2 tablespoons chopped fresh thyme 2 tablespoons chopped fresh sage 1/2 cupe chicken stock 2 tablespoons butter, cut into 4 pieces Half a day in advance, soak the apricots, dates, raisins and currants in the wine. Set them aside at room temperature. Several hours before cooking, rinse and clean the chicken livers, removing any veins. In a large bowl, combine them with the milk and stir gently. Cover with plastic wrap and refrigerate for 2 to 4 hours. With a slotted spoon, lift the livers from the milk. Pat them dry with paper towels. Sprinkle them with salt. Place the flour on a plate. Dredge the livers in the flour, shaking off the excess. Have on hand a plate with a double thickness of paper towel. In a large skillet, heat the oil (there should be a thin film on the bottom of the pan). When the oil is very hot but not smoking, cook the livers in batches, without crowding them. Brown them well on both sides. Transfer them to the paper towels to drain, and cook any remaining livers in the same way. Remove the fat from the skillet. Add the pancetta and onions and cook them over medium-high heat for 10 minutes or until the onions are soft and the pancetta is crisp. Add the fruit and any wine left in the bowl to the skillet along with the sage and the thyme. Cook over high heat, scraping any brown bits that cling to the bottom of the pan. Add the stock and bring to a boil. Turn down the heat slightly and cook the sauce until it is reduced by half. Add the butter and swirl it around the pan just until it melts. Return the chicken livers to the pan and warm them through. Sprinkle with salt and pepper. Serve at once. Makes 6 servings. (We enjoy chicken livers with roasted, mashed buttercup squash and sauteed broccolini, which is how I think I served this delicious rendering). seagrass

TURKEY-CHICKEN PATTIES

Makes 8 medium patties

1 1/2 lb ground turkey, chicken or a mixture of both (about 700 grams)
2 slices firm wholegrain brown bread torn into small bits
2 eggs, beaten
1 small onion - minced
1 TBS finely minced almonds or ground almond (optional)
1/4 teasp dry mustard eg. Colman's
1/8 teasp ground sage (optional)
1/2 teasp ground thyme
1 teasp salt
1/4 teasp fresh ground pepper
1/4 teasp ground nutmeg
4 TBS tomato purÃ©e or tomate frito (can also be condensed tomato soup) for mixture
plus 2 TBS more for sauce
1/2 cup finely grated carrot
1/2 cup finely chopped or grated celery
1 cup low sodium chicken or veg broth
olive oil for cooking

1. Mix the meat with the beaten egg, onion, seasonings, bread and almond crumbs, grated carrot and celery, 4 TBS tomato purÃ©e.
Mix well together with hands.

2. Divide mixture into 8 portions and form with hands into 8 equal patties.

3. Heat about 2 TBS oil in large non-stick frying pan and when hot, add four of the patties, cook about 4 minutes then turn them over.
Turn down heat to low, spoon 2 TBS of the tomato purÃ©e on top of the 4 patties, add half the broth to the pan plus one TBS of remaining tomato purÃ©e, stir liquid, put on lid and simmer for about 8 minutes. Remove patties to heated dish and spoon over remaining sauce.

4. Wipe pan and repeat step 3 for last 4 patties or freeze them for another day.

Chicken (or Turkey) Enchiladas

1 pound of ground chicken or turkey
1 cup of chopped onion
Â¼ cup chopped green pepper (to taste)
2 cloves of chopped garlic

1 8-ounce can of tomato sauce
1 Â 12 to 14 ounce can of hot chopped tomatoes with green chilies (Rotel)
1/3 to Â½ cup of salsa
1 Â 15.25 ounce can of corn, drained (could use frozen or off the cob)
1 Â tablespoon of chili powder (I used 1 Â½ tablespoon to taste)
1 Â tablespoon of cumin (or to taste)
1-teaspoon onion powder
4 Â 5 shakes of hot sauce
1 Â 16 ounce can of refried beans
1 Â 16 ounce container of sour cream
Â¾ cups shredded cheddar cheese
6 Â 10 inch flour tortillas

Brown first 4 ingredients Add tomatoes and spices and simmer until liquid is absorbed, stirring occasionally.
In another saucepan, warm beans. Get sour cream and cheese ready to put on warmed tortillas. Layer beans, meat mixture, sour cream and cheese on tortillas. Fold over and serve warm. Can save calories and use non-fat products.
