I really like the baking mix recipe from SACO Buttermilk Blend -- in any supermarket, w/ address on the tub -- which uses shortening. I'm not into oil instead of shortening, but I avoid hydrogenated oils & substitute butter -- you can see I'm far from pure. But my reason for adding NO fat to my SACO baking mix per se is that I want to add fat differently in different circumstances: for pancakes -- so my last-cooked pancake will be as fluffy as my first -- I emulsify w/ the egg yolks my softened fat (bacon drippings or butter), then I combine that mixture + the combined milk & lightly beaten egg whites to the dry ingredients; but for biscuits I cut chilled butter into the flour mixture before adding liquids. If nothing else, I hope this introduces you &/or others to SACO.

I made these, they're great. Cracker Barrel Old Country Store Dumplings Ingredients: 2 C Flour 2 tsp Baking Powder 1/2 tsp Salt 1 C whole Milk 4 Tbsp Vegetable Oil Preparation: Mix above ingredients, blend them well and turn out on to a floured surface. Knead 4 or five times and divide dough into two parts. Roll out one piece of dough to 1/8" thick and cut into 1"x1 1/2" strips. Place into a large sauce pan that you have place 8 cups of water and 3 chicken bouillon cubes that has been brought to boil and the bouillon cubes have been dissolved. Cook 1 half of dumplings until just about done and strain and set aside. Next finish the other half of the dumplings in the same way. While cooking the dumplings you can prepare the sauce. Dumpling Sauce 3 Tbsp Butter 4 Tbsp Flour 1/4 tsp Salt 1 C Whole Milk 2 Chicken Bouillon Cubes (crumbled) 1/2 tsp sugar 1/2 -3/4 C Dumpling Cooking Liquid (after dumplings have been cooked) Place butter in medium sauce pan and melt, add salt and flour, stir until thick. Mix sugar with milk, and add to flour mixture a little at a time and stir constantly with a whisk until thick and smooth. Remove from heat. Place cooked dumplings in dumpling sauce and add 1/2 cups of cooking liquid in which the crumbled chicken bouillon cubes have been added and stir gently, Simmer dumplings until blended on low heat. More cooking liquid may be added if needed.

Think I can do it, myself. I did find, you poke the hole in the end after it's baked.

I don't care if others avoid what I want to ingest. I'm just sick of the banning and the re-marketing of foods. You want to believe you're gluten intolerant or that carbs will kill ya? Fine and dandy with me. But I want to have access to my favorite breads without 1/3 of the bread aisle being replaced with gluten free, carb free, no animals were injured in the making of this bread free products. Diet Pepsi changed it's formula due to this type of madness. Bad move on their part. I see Diet Dr. Pepper flying off the shelves now while the Pepsi just sits there. Tastes awful so their consumers have found an alternative. Because a small minority of anti science nutcases they reformulated a product the majority preferred. The fruit and nuts group doesn't even drink much soda but somehow they "lobbied" and won.
