I had beef and noodles, along with some mashed potatoes. Tried a Pillsbury grands biscuit since I can't seem to make good ones of my own. A lot of carbs for one meal......

Cool and very spring-like today. I had taken a teeny chicky out to thaw a couple of days ago, and today was the perfect day for it.

I made chicken with 40 cloves of garlic. I put potatoes and carrots in with the garlic and chicken. My goodness you'd think hubby had never had a good meal before. He couldn't say enough about it! He told me to hurry up and put it in the binder. LOL

I've got rice pudding on now. Haven't had that for a long time and we've got lots of milk. Great sale this week on it.

Jas, I'm going to have to try that 40 clove of garlic chicken. That's quite a nice recommendation! Question, where did you put the potatoes and carrots? Were they diced small and stuffed? Sounds yum!

The chicken was browned in my enamelled cast iron pot then deglazed with chicken broth. The potatoes were quartered and carrots cut in chunks. They, the peeled garlic and chicken put in the pot and the whole thing popped in the oven and baked at 375. I basted the chicken and veggies a couple of times. I'm really glad I did the potatoes that way instead of mashed; they were infused with the garlic taste. Fabulous.

We had a lovely pot roast with onions, carrots and mushrooms made in our enamelled cast iron pot and mashed potatoes with roasted garlic butter.

Yum, Pam! That sounds wonderful. Guess I need an enamelled CI pot. I've resisted because of the weight.

I went to Captain D's with the kids and Alyssa. I had the fish and broccoli, green beans, hush puppies and unsweetened iced tea. Very filling.

Hi Hounds, I think after eating all weekend , we'll be having many low cal, low fat meals like yours. I bet it was good.

Sue, I think I've only eaten in Captain D's once. I didn't know they had those vegetables. Maybe I'm confusing it with Long John Silvers.

We had pizza burgers. Make meatballs, flatten them like hamburgers, bake in the oven, when done, top with Mozzarella cheese, then we topped with our favorite spaghetti sauce...DelGrosso...put in a bun. Oh yummm. Our dear neighbor came over to try one, loved it, and took it home for her lunch tomorrow at work.

Wow, Lindaohnowga, I never thought of that. What a good idea! I'd use Texas toast (garlic), I think.

Made Shepard's pie-was good but I ate way too much!
