What's for dinner Monday?

We're having baked tilapia with sauc leftover from the last time we had fish, baked potatoes and white peaches from Georgia.

It's been raining on and off all day due to that subtropical storm Beryl. We sure did need the rain--in fact, I wish we'd get a lot more.

Hope you've enjoyed your long weekend (for those in the U.S.). What's everybody having for dinner tonight?

Was really wanting smoked ham sandwich from Sykes BBQ, way over there, so I went.

As well as everyone else living in that area.

My number was 389, and they were calling out 360's so I had a while to wait, but it was worth the drive and the wait.

Short me, had to sit on a stool, at a little bar for 6 stools, just for eating the good stuff.

I have a prime rib in the oven. Going to fix mashed potatoes, corn and a salad to go with it. Left over prime rib will be sliced and frozen for our trip. My cousin says we eat GOOD on our trips. LOL

I fixed a big salad with all kinds of green stuff plus grapes, manderines, hard boiled eggs, sunflower seeds, toasted almonds. I whipped up a quickie wasabi mustard vinaigrette. Sometimes, a salad is the only thing that will do! But, I know that some of the meals mentioned tonight are going to be on our table soon. I love Mediterranean pasta....just think Greek instead of Italian. I always add canned artichokes to mine, along with the other usual ingredients. Wonderful with chicken or shrimp. You can use canned chopped tomatoes, too.

Pam, I love quiche and have leftover ham in the freezer. I should make one with ham, and onions, peppers and mushrooms. Hubby won't eat any hot cooked eggs, so it's me and my quiche. The last time I made hamburger rolls I posted a pic :) Cheri I love pot roast. I tend to make mashed potatoes on the side, instead of in the slow cooker. We like them that way better. Alice your dinner sounds great! We eat a fair bit of rice, just love it. Ellendi would you share your quinoa recipe on the Share your Recipe Thread???? We enjoy quinoa. That's the pits you had so much trouble finding the sriracha. Old Fixer, IS there such a thing as too much garlic? LOL Party, I was going to bake some sweet potatoes yesterday, but they are really small, so I mashed them along with white potatoes. We like them mixed. Matti, I've heard that In n Out burgers are good. Enjoy! Rhizo, we just had some homemade apple sauce that I took out of the freezer with a warm oatmeal-carrot muffin! Georgysmom, everyone deserves pizza at some point!

Ellen chicken salad sounds delicious Shirley, Spanish rice sounds good. I make one version in the slow cooker, with ground beef. Sue, I like my fried egg sandwiches with tomato as well, and bacon when we have it. Kath, I used to like the Southwestern Salad from McD's. Haven't had one of them in a couple of years now. Raven, I love that skillet dish. One-dish meals are so handy. OF, as you said, frozen lasagna is way easier than making one from scratch! Pam you had what is the perfect steak dinner! Jim, veggie soup and lemon pudding! Yum! We're in for the high temps tomorrow as well with high humidity. 30C but feeling much hotter with the humidity.

Jim congratulations on your upcoming cruise! I love it that you had wine with bacon and eggs. Audrey, your dinner looks and sounds fabulous. We had baked potatoes last nite. Shirley, I've yet to make red beans and rice. What's throwing me off from making it, much as I'd like to, is that we only have kidney beans, as far as a red bean, and I know that isn't the kind to use. I made quinoa with toasted almonds and red currants the other day. We like quinoa. Kath, for some reason companies change their recipes. In the event of making things healthier, taste gets compromised. Less fat and salt is less flavour it seems. Prairie Rose, do you make the light fluffy dumplings? That's what my Nan made and that's all I've ever known. I've never attempted it; I should! Raven, that looks divine!! We love roasted vegetables! Erin, I hope you feel better. That's dedication, coming onto a dinner thread when you're not feeling that great. Betsy, that's nice comfort food. Gyr_Falcon, that's a great sounding meal! Glad to see you here.

What good eating you are all doing. Everything sounds great to me. I fixed a toasted cheese sandwich and had leftover lima/butter beans.

I guess it will be leftovers from yesterday whenever I get around to eating. Not hungry yet.

Nita, I think you eat good ALL the time! Dinner sounds yummy!

Shirley, grilled cheese may well be on our menu tomorrow night. We've been without a dishwasher since the first part of May, but the one we had to order is finally in and will be installed Wednesday. I've been trying to be kind to Harry (my clean-up guy) by washing as much as I can before dinner. We'll both be happy to get the new one.

We live in an Independent Living senior apartment complex. Our rent includes ten meals a month. Today's meal (lunch) was watermelon, homemade potato salad, baked beans, a hamburger with all the trimmings, and a Good Humor ice cream bar. All was very good.

BBQ boneless pork ribs, baked beans, corn on the cob, deviled eggs. Very good.
