A client bought me boxes of white mushrooms and a large box of huge portabellos. I'm looking for recipes for these, mainly a delicious NON-CREAMY mushroom soup as I prefer a brownish base, not creamy. I've looked on the Internet and found 2 recipes, but all the others are creamy.

Anyone have a good one to share as well as other recipes to use up the mushrooms. I'll be making stuffed, marinated, and the soup. Is there thing I can make and freeze to eat later. I want to use all these up (and there are a lot), so they don't get wasted. Thanks.

I slice the mushrooms, saute them in a little butter and freeze them on a cookie sheet. Then I put them in zip lock bags and can take out a handful whenever I'm making something that calls for mushrooms.

I made a big batch of the Moosewood Mushroom Barley soup a while back. It is non creamy and I loved it. I used one of the Moosewood cookbooks, but found it for you - posted at the blog below.

Coey, as long as it's a wee little spike you shouldn't have any trouble at all. Just don't knock it off while replanting the phal. I would say the earlier in it's development the better. I would up the watering a bit after you repot. Old bark retains a lot more water than new bark so you may stress the phal if you don't make sure it's getting the same amount of water that it was so happy with before the repotting. And then check it every couple of days until you establish it's new water requirements. Start the repotting by soaking the new bark for at least 30 min and at most 24 hours before you're ready for it. That will insure that it's good and moist. Also, chances are that you won't need a bigger pot so just repot with new bark in the same pot. But it wouldn't hurt to have one size bigger on hand just in case you get in there and it's root bound.

Honestly, I have no real knowledge about mushroom allergies. But, most allergies are triggered by a protein in the allergenic substance - the protein is the allergen. If it were me I would avoid contact with the soil as I would suspect it of possibly containing the protein/allergen. The likelihood is probably low, but there is some level of risk. The food issue is not uptake (I don't know of plants taking in soil bound proteins), but if the offending allergen is soil resident then there is a risk of food contamination from soil contact. The greatest risk would most probably be with root vegetables, then low-growing leafy stuff (lettuce, spinach, etc.), then the higher growing fruiting stuff (peppers, tomatoes). If the produce was well washed I would guess that it wouldn't be a problem, but it's a guess. edit - meant to add. you sure are lucky to have a source of SMS. I usually pull them out and throw them in the compost pile, but I don't know if it really matters. I found some in the mulch nect to my daughters sand box that were rather phallic looking it was unlike any mushroom I had ever seen. I definitely felt I needed to remove it before my neighbors started making too many jokes about what I was growing these days.

I know one will feel sorry for me, bugt I am down in south west Florida way down near Ft Myers. Have spent the day out on Pine Island helping with a big garden club plant sale and seminars etc. Just got in and am so tired and hot To tired to go to the pool But am checking emails and there Puffballs Oh, nice having an email about puffballs And Sudbury I like as well My eldest grandson is planing to go to University there this september Thanks for the puff ball note Oh boy, sure would enjoy to have one , once again. didn't know one should be careful of them. oh the big portabella ones are so good grilled then make burgers out of them, no meat needed. I also love them stuffed with crab meat.
the white ones I love to batter dip and fry whole.

Season the white ones, drizzle with a tiny bit of EVOO, and put a piece of gouda cheese in the cap, then broil. Yum!

I like to season the portobello caps and drizzle with a bit of EVOO, then grill.

Big THANKS. I will take your suggestion about freezing the mushrooms. Having them handy that way will be a time saver later and none will go to waste.

The soup looks and sounds scrumptious. I'll try that one tomorrow. I like barley in soup.

Love the big ports grilled. I've had them with a grilled tuna steak on top between a bun. Yum.

Keep the suggestions coming.

If the white ones are button mushrooms, here's my favorite!

Slice them, put them in a boiler pan, add soya sauce, garlic powder, and heat them.

I love to add as a topping to bacon wrapped grilled hamburgers. Yummy!

I love portabella mushrooms. You can make a healthy delicious veggie burger with them.
First, make a mint sauce by blending together Greek-style yogurt, fresh mint leaves, garlic and a little Feta. Then clean the gills off the portabella mushrooms, grill the caps lightly in olive oil, salt, pepper, basil, balsamic vinegar and maybe a tiny bit of dried chili powder. Spread the mint sauce on soft buns, Slap on some fresh mozzarella, place the mushrooms on there, end it with a slice of fresh avocado and youÃ¯Â¿Â½re done.
