LOOKING for: What fish would you use?

Hey..

I want to make a savory crepe, using a nice white fish. What would you use:

Hailbut

Cod

Alaskan White Fish

or

?

I am thinking about using a light white sauce seasoned with some fresh herbs, and serving it with asparagus spears and some julienned carrots. I have a recipe for little potato tartlets that are really good that I might serve with this. The tartlets bake into a really nice golden brown color, have a little crunch on the crust and tops, but a nice 'al dente' texture. They are made with baby red potatoes.

The halibut is so expensive, and the cod isn't cheap but usually easier to get and less expensive. The Alaskan White Fish is a family favorite.. but I don't know if the texture and the flavor are up to this choice. And, I am not sure what will be in season or not in season.

(I am inviting some friends over for a dinner party the end of July, so I still have time to decide).

(I am thinking about doing a clear soup as a starter, (or maybe an aspic), and having some sort of a peach or plum dessert, as they both should be in season and be perfect).
