RECIPE: Looking fot Crock Pot recipes

I'm looking for some easier crock pot recipes. Summer is coming up and it will soon be too hot to heat the house up with the oven (especially in this muggy Arkansas weather). If you have any crock pot recipes, I'd love to try them out!

This is my favorite & easy!
Crock pot Chicken & Dumplins (serves about 4)

4 skinless, boneless chicken breast halves
2 tablespoons butter
2 (10.75 ounce) cans condensed cream of chicken soup
1 onion, finely diced
2 (10 ounce) packages refrigerated biscuit dough, torn into pieces

DIRECTIONS
Place the chicken, butter, soup, and onion in a slow cooker, and fill with enough water to cover.
Cover, and cook for 5 to 6 hours on High. About 30 minutes before serving, place the torn biscuit dough in the slow cooker. Cook until the dough is no longer raw in the center.

ITALIAN BEEF
One 3-4 lb roast beef (rump roast or sirloin tip)
1 jar pepperochini peppers, juice & all
1 can beer
1 can beef bouillon
Combine all ingredients in a large crockpot. Cook on high 30 minutes; reduce heat to low. Cook until beef is tender. For supper, start cooking before work. If you want it for luch cook at bedtime.)
Remove meat from juices, slice thinly & return to pot. Serve on hoagie buns & dip sandwiches in juice.~~
CROCKPOT FRENCH DIP SANDWICHES
2 cups water
1/2 cup soy sauce
4 whole peppercorns
1 tsp dried rosemary
1 tsp dried thyme
1 bay leaf
1 tsp garlic powder (had none so used 1 minced garlic clove)
3 lb boneless beef chuck roast, trimmed
8 French or sourdough rolls, split
Combine water, soy sauce, peppercorns, rosemay, thym & garlic in a slow cooker, stirring until wel blended. Place rost in cooker & cover.
Cook on high for 5-6 hours or until beef is tender. Remove meat from broth & shred with a fork. Serve beef on rolls. Pour broth in small bowls for dipping.~~ Good topped with Swiss cheese or sauteed onions, peppers or both. I like mustard on the rolls, too.~~

I chose to start the crock pot early because I didn't have time to make dinner at dinner time yesterday. I also wanted to cook the veggies (especially potatoes) until very soft - that's how my two boys like it - also the longer the cooking time the better the flavor. I usually use potatoes (carrot/yam/rutabaga), onion, celery, or any root/stalk type of vegetables in it, depends on what I have on hand. Tomatoes do add good flavor to the curry but you can go without. If you want to incorporate more veggies cooking in slow cooker I have another idea. I use my crock pot to make lentil soup. I use red lentil because of the brilliant color. I sautee the veggies i.e. onion, parsnip/yam/rutabaga with celery and other veggies I like. Put in crock pot with water/broth/milk/juice (whatever your choice is). My family like a bit of ham in the pot so I put a small chunk of ham with a bay leaf or two, season with salt & pepper. Cook on high for 4 hours, or low for 8, until everything is very tender. Then I fish out the bay leafs and ham, puree everything else in a blender. The soup is very creamy and no veggies in sight. Slice the ham and chop up some fresh parsley and place them over a bowl of soup. Drizzle some yogurt or any dressing desired. My husband and little love this dish. Recipe for stewing beef in the crock pot

I sear my stew meat before putting it in the crock pot, then I add some beef stock and onions or whatever seasoning you prefer and just let it cook on low for about 8 hours. I make my stew that way so I also add the veggies, but you could just cook the meat and the broth would make an awesome gravy.

I have a couple of chili recipes, so far all have been good in the crockpot. Grains and pasta in the crockpot are a no-no if you're going to leave it for a long time, but that usually isn't an issue with chili. I'm only saying this because vegetarian me has a recipe for cracked wheat chili, which I would not do in the crockpot. But my other recipes turn out great, in fact it's one of the best things for the crockpot, IMHO. I've only made meat-based chili once in the crockpot, with ground turkey. It is good to brown the meat before adding. If you like beans in your chili, another great thing to do is the day before, to make the beans fresh, starting with the dried beans. I almost always use canned beans, but fresh cooked ones are so much better, and for me, the crockpot is a good way to do beans.

Beef roast- 3-4 lb beef arm roast- for tenderness 3 cups water 1 medium chopped into slices yellow-and or- red onion 1 packet dry onion soup mix 1 small bag of baby carrots 5 white round potatoes chopped into cubes whit skins on-explain later 1 can of drained mushrooms(or 2 depending on how much you like them) 2 tbsp salt pepper seasoned to taste 2 tablespoon garlic powder- or you can replace salt with garlic salt 2-3 tablespoons of extra virgin olive oil basil,oregano,and any other of your favorite seasonings In crockpot mix together 2 cups water, half packet of onion soup mix, salt and pepper and any other seasonings. Put crockpot on high and let soup warm while we move to the next step Have a large skillet- big enough for the roast- place on stove with olive oil and turn stovetop to medium- let this heat up while your seasoning the beef First cut the beef roast in halves. Blot dry with a paper towel.. next take a knife and make slits in the beef against the grain all the way across just enough to score it for seasonings. season the beef the with the seasonings from above.. Braize the beef for about 5-8 minutes on each and everyside of the beef- until it has a nice brown coat. Once browned use a knife to poke slits through the beef to help the flavors cook through. Next step place the browned beef in the crockpot and put crock pot to either A) medium (will take apprx. 6-8 hours) B) leave it on high (apprx. 4-5 hours) Next in the skillet you had braized the beef in, add your potatoes, carrots, 1 cup water, the rest of the onion soup mix, the chopped onions, mushrooms as well as any seasonigs you desire leave skillet on medium and let simmer while coverd for apprx. 10 -15. This is why you leave the skins on the potatoes, it allows the potatoes to get soft yet the skin keeps them intact as they dont crumble..... yet. Once that has simmered simply pour into your crockpot. cooked for the alotted time. The roast and potatoes will be melt in your mouth, and with the onion/beef gravy on top will be flavorfull.

Pork Chops Delight
4 boneless pork chops
flour seasoned w/ salt & pepper
2 T. vegetable oil
1 large onion, sliced
2 c. chicken broth (I use 1 can Swanson's)
2 T. flour
8 ounces sour cream
Heat oil in skillet over medium-high heat. Dredge pork chops in seasoned flour & brown in skillet, turning to brown both sides.
Layer chops in crockpot w/ onion slices. Pour chicken broth over. Cover & cook on low X 7-8 hours (or on high 4-5 hours).
Stir the 2 T. flour into the sour cream until smooth. Remove the chops when done & add the sour cream mix into the cooking juices. Raise the crockpot to high X 15-30 minutes or until the liquid has thickened.
Serve chops over noodles or rice w/ the sauce.
