Toe tapping to: Cornbread and butter beans

This isn't the one I'm used to: I'm just a bowl of butter beans, but I like it.

I love a bowl of butter beans and ham, with a good slice of cornbread.

Hope you listened to the song.

My friend and I went out for a blue plate special.

She ordered chicken fried steak, butter beans and hashbrowns.

Being from Wisconsin, she had never had chicke fried steak and thought it was gonna be country fried steak. Thought the CFS was gross and THE BUTTER BEANS she has never seen such big beans. Finally had to get the waitress to set her straight on both the CFS and the butter beans.

Wertach, I mailed you thru the gardenweb. Hope it got thru to you. This morning I went out and picked a bucket of Harry's HTD speckle butterbeans. Had to use a ladder to pick some of them out of my orange tree. Had planted them at the edge of the tree so they wouldn't get full sun during the hot weather. They did not make during the hot weather but as soon as it cooled off they were very prolific. In the picture the hulls had four beans. Harry I don't remember what beans you crossed to develop this HTD bean but it is a winner. We were hoping it would make during the hot summer here in Florida but it wouldn't. I have a couple hundred seed I will mail out in 25 packs to anyone that wants to give them a try. E-mail me your mailing address and I will send them to you. Harry's HTD ButterBean Luther

I've never had Marie Callender's cornbread, but my experience with that brand's other stuff is you start with at least a cup of salt......and go from there. Joe, your recipe looks very good. I'm cutting and pasting. On the carrot thread, I posted a link to different kind of cornbread recipe, which was pretty good if you like it sweet. It was sort of cakey. Here's the recipe, which I got by doing a search for carrot cornbread. It comes from a poster to a website called Baking Bites. The poster's name is Nicole. Sweet Corn and Carrot Cornbread 1 cup all purpose flour 3/4 cup yellow cornmeal 1 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt 1/4 cup sugar 1 cup buttermilk 1 large egg 1 large egg white 2 tbsp vegetable oil 1 tbsp honey 1 cup grated carrot (I prefer a fine grate) 3/4-1 cup fresh sweet corn (1 medium cob) Preheat oven to 400F. Lightly grease an 8-inch square baking pan. In a large bowl, whisk together flour, cornmeal, baking powder, baking soda, salt and sugar. In a medium bowl, whisk together buttermilk, egg, egg white, honey and vegetable oil until smooth. Pour buttermilk mixture into the flour mixture. Stir until just combined, then add in the grated carrot and the sweet corn and stir to evenly distribute. Pour batter into prepared pan. Bake for about 28-32 minutes, until a tester comes out clean and the bread springs back when lightly pressed. Cool in the pan on a wire rack. Serves 9-12. glenda, not only did I take a bite for you, but maybe two bites for you. We have guest in for the weekend. This morning I got up and fixed hot cornbread, sawmill gravy, and also had butter and molasses on the table. The only thing that I didn't have was the cracklins. I used the last bit of them a few weeks ago. These folks had never eaten anything like this before. They all have the recipes and ready to go back home and make their own. We are going to the grocery store in just a bit, and one of the couples is going to pick up some cracklins. There are only a few places here that I buy them. Hubby doesn't like the cracklins, so when i make it with the cracklins, just put it on one side. My little southern granddaughter who is 2, hasn't developed a taste for the cracklins. She told me there were bugs in my side of the cornbread. Glenda, you are a wonderful cook, thank you so much for all your wonderful recipes. Just thought of one thing I wanted to ask you. Did you ever make hard tack biscuits. Think that is what they were called. Back in the 50's, a friends mother would make these and I loved those hard biscuits.

Johnny and Leava, First of all, thanks to both of you for your service. My husband spent 23 years in the AF, and I spent almost 20 years working for DOD so I am very familiar with the life style and the sacrifices made. Leava, the mylar may protect your grain from bugs, but mice and rats can eat through those bags. They will tell you that mice can't, but that isn't true. I also find that they are hard to store because of their irregular shape. Even if you have the means to vacuum the air out you need to keep them as flat as possible as they firm up. Most of my grain is in cans or refrigerated, but what I am currently using is just in jars with good lids, or gallon plastic rectangular containers with snap on lids from Walmart. I have never had bugs get into anything except bags. Five gallon plastic food grade buckets with tight fitting lids also work if you are storing a large quantity. Johnny, I sometimes make sourdough bread so I keep a starter going at all times. I like what sourdough does in bread even if I am not making a 'real' sourdough loaf. I frequently make up a large amount at night then just add it to my normal bread recipe (with a few adjustments) to make more loaves instead of the 2 my recipe would normally make. It gives the bread depth of flavor and prolongs the freshness of the loaf. I experiment all of the time and my husband says he never knows what kind of bread we will be having next. LOL Last week we had white bread with feta cheese and black olives, and loaves made with white wheat, a little molasses, and the addition of chia seeds, flax seeds, and a large portion of sunflower seeds. It has become one of our favorites. I used some sourdough in both types. As far wasting sourdough starter....I have been cooking with sourdough for years and I never have waste. That idea just seems to have started recently and KAF has picked up the torch and promoted it, I think. I like KAF products, especially pans, and order from them all of the time, but some of their recipes are a little weird, (I'll be more specific if you want), but many are very good. I especially like this one Waffles which is a great thing to use when you have extra starter. It has a sponge made with buttermilk the night before. It would work for pancakes or waffles, but I always make waffles with it. It only makes about four waffles in my waffle iron.

Oh yes Glenda loved the toe tapping music, I had never heard a song about butter beans before. Here in Tx. chicken fried
steak is dipped in a batter of egg and milk, floured and fried. You can do the same thing with a chicken breast. The cut of meat is called a cutlet, tenderized.

What's the difference between country fried and chicken fried steak? I've ordered both and there was no difference. Both made with cube steak. What am I missing?

I love butter beans. Your friend is probably used to the lima beans. Not as good as a big ole butter bean IMO.

Where did you have lunch?

I will be in B'ham June 4th for about a week babysitting Grands. Maybe we can do lunch on my way in or out of town.

I love butter beans and cornbread.Haven't had any in a long time but I really want some now.
I'm also curious about the difference in Country fried and Chicken fried steak. What is our friends definition of country fried steak Glenda? In every recipe I have found so far they are the same.Some do use bread crumbs or cracker crumbs instead of flour for the coating but are all called either Chicken fried or Country fried.Maybe she is talking about smothered steak.
Linda-One of our best selling items on the menu at our cafe several years ago was chicken fried chicken.That is still the preferred way to cook chicken breast in this house.

Best chicken fried steak I ever had was in Texas, think Dallas, in the cattle trading area???????

And of course topped with white pepper gravy. Yummy!

There IS a big difference between chicken fried and country fried.

Chicken-Fried: Deep-fried, but no bacon grease is used
Country-Fried: Pan-fried, with bacon grease
