Feeding 150 What do you think?

Hi

I have been asked to chair the food committee for the high school Regiment. Last year we fed 150 high school students and parent volunteers at each of 7 events. The food is always served at the site of the competitions.

My predecessors always served *lots* of choices. For example, the Chinese Menu included Chinese Chicken Salad, Beef and Broccoli, Teriyaki Chicken, steamed rice, fried rice, miso soup, and egg rolls deep fried on site (yikes!). The Spaghetti meal always had noodles served plain so they could choose the toppings from meatballs, sausages, red sauce, and white sauce. There was always salad and bread as well.

My instinct is to simplify and I wanted to see if you all agreed with my approach or not!

Here are examples of what I would serve:

Baked Ziti (with and without meat), Caesar Salad, Garlic Bread, and Cantaloupe.

Teriyaki Chicken rice bowls (chicken, rice, broccoli, carrots, and teriyaki sauce).

Pulled Pork and Pulled Chicken Sandwiches, Mandarin Orange green salad as well as a pasta or potato salad.

What do you think? Of course variety is nice, but is it necessary? It is a *lot* more work which is freaking me outÂ
