Candied Kielbasa

"Kielbasa, also called kielbasy or Polish sausage, is a spicy sausage usually made with pork (though beef is sometimes added). It comes in chunky links, and is sold precooked. I haven't met anyone yet who didn't like this dish. I even like it and I really don't care for kielbasa that much! Another bonus is that it is easy to make, and is yet another recipe for your slow cooker."

Original Recipe Yield 8 servings

Ingredients

1 cup packed brown sugar

1/2 cup ketchup

1/4 cup prepared horseradish

2 pounds kielbasa sausage, sliced thin

Directions

In a slow cooker combine the sugar, ketchup and horseradish. Add the sausage, and mix well. Cook on High until it starts to boil. Reduce heat to Low, and cook until sauce thickens, about 45 minutes to 1 hour.

LACHO AND FRIED POTATOES

POTATOES:

6 large Russett potatoes (or whatever brand you choose to use)

LACHO:

2 packs of Pork Smoked Sausage
3 red bell peppers
3 yellow bell peppers
3 orange bell peppers
3 green bell peppers
2 large white onion
6 large tomatoes

It is best to start the potatoes first, because they take a while to cook.

Slice potatoes into cubes, about 1/2-1-inch thick and season to taste. Heat 1 tablespoon of grease (or vegetable oil) in a large skillet on medium, and add potatoes. Fry potatoes on medium, stirring occasionally, until they are golden brown or have reached desired doneness. Now, let's start the Lacho!

Slice smoked sausage about 1/2 inch thick and sautÃ¯Â¿Â½ in a LARGE skillet on medium heat for about 20-25 minutes, stirring occasionally.

As sausage is cooking, slice ALL bell peppers into long 1/4-1/2 inch thick strips. Do the same with the 2 onions.

Once the smoked sausage has produced about 1-1 1/2 cups of juice, add all bell peppers and onions in with sausage and mix together. Let the smoked sausage, bell peppers and onions sautÃ¯Â¿Â½, stirring occasionally, for about 30 minutes or until peppers and onions have softened.

Slice ALL tomatoes and lay on top of sausage, pepper and onion mixture. Turn heat to low and let simmer for about 10 minutes, stirring occasionally.

You can eat Lacho and potatoes separately, or mix them both together.

I haven't tried this one yet. Someone from the cooking board said it was great.

Snickerdoodle Blondies

2 2/3 c flour
2 t. baking powder
1/2 t cinnamon
1 t kosher salt
2 sticks softened butter
1 c sugar
1 c brown sugar
2 eggs
1 1/2 t vanilla
Topping: 2 T. white sugar mixed with 2 t cinnamon

Preheat oven to 350ÃÂº. Grease a 9x13 baking pan. Sift together flour, baking powder, cinnamon and salt. Set aside. Beat together butter and sugars until creamy. Add eggs and vanilla and mix until smooth. Add the flour mixture and mix until the flour is just incorporated. The batter will be thick. Scrape batter in prepared pan and spread evenly. Sprinkle with topping. Bake for about 25 minutes.

Blend the broth, peanut butter, 1 tsp lime zest and juice, soya sauce, ginger and 2 tsp sesame oil until smooth. Set aside. Heat the oil in a large, non-stick skillet set over medium-high heat. Add the carrots; stir-fry for 3 to 4 min. add the bok choy and shrimp; stir-fry for 2 min. or until shrimp are opaque and vegetables are tender-crisp. Stir in the peanut butter mixture and cilantro. Toss until heated through. Meanwhile, cook the rice noodles according to package directions; toss with remaining sesame oil. Serve the stir-fry over the rice noodles. Garnish with reserved lime wedges, if desired.

It's picnic time! What's better than pimento cheese! Homemade pimento cheese 1 lb sharp cheddar cheese 1 4 oz jar pimentos 1 small can evaporated milk 1 cup Hellman's mayonnaise ( if you like it thinner, add 1/3 cup more) I like it thin. Grate cheese and pimento in processor. Combine with remaining ingredients. Leave in mixing bowl, refrigerte for several hours or overnite.to thicken. Makes almost a quart. Would make a quart if I didn't have to sample, before jarring.

Chicken with Potatoes, Bacon and Cabbage (Real Simple) 3/4 pound new potatoes, thinly sliced 2 tablespoons olive oil kosher salt and black pepper 4 6-ounce boneless, skinless chicken breasts 3 slices bacon, chopped 1 small shallot, minced 1 tablespoon whole-grain mustard 3 tablespoons cider vinegar 1/2 small head savoy cabbage (8 ounces), cut into 1/2-inch strips Heat oven to 425 F. On a rimmed baking sheet, toss the potatoes with 1 tablespoon of the oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Roast, tossing once, until golden brown and tender, 20 to 25 minutes. Meanwhile, heat the remaining tablespoon of oil in a large skillet over medium-high heat. For the chocolate-lovers in our group. I won't be making this but the reviews were good.

Chocolate Fudge Pie (Real Simple)

Homemade piecrust or 1 store-bought piecrust, fitted into a 9-inch pie plate
6 ounces semisweet chocolate, chopped, plus more shaved for topping
1/2 cup unsalted butter (1 stick)
3 large eggs
1/8 teaspoon kosher salt
1/2 cup plus 3 tablespoons granulated sugar
1 1/2 cups heavy cream

Heat oven to 375 F.

Place the pie plate on a baking sheet. Prick crust with a fork and line with foil. Fill to top with pie weights or dried beans. Bake until the edges are firm, 20 to 25 minutes. Remove the foil and weights and bake until just golden, 8 to 10 minutes.

Reduce oven temperature to 325 F.

In a heatproof bowl set over (not in) a saucepan of simmering water, melt the chocolate and butter.

Using an electric mixer, beat the eggs, salt, and 1/2 cup of the sugar until fluffy, 4 to 5 minutes.

Fold a third of the egg mixture into the chocolate mixture, then fold in the remainder.

Pour the chocolate mixture into the crust and bake until puffed and beginning to crack, 20 to 25 minutes. Cool for 1 hour, then chill.

Beat the cream with the remaining sugar until soft peaks form. Spread over the pie and sprinkle with the shaved chocolate.

This is on my "to try" list for next week. I like apples and cheese.

APPLES AU GRATIN

4 pounds Granny apples, peeled and sliced
1 cup raisins
1 teaspoon cinnamon
1/2 cup lemon juice
1-1/2 cup brown sugar, packed
1 cup flour
1/3 teaspoon salt
1/2 cup butter, softened
2 cup sharp cheddar cheese, grated

Arrange apples in a well buttered casserole. Sprinkle with raisins, cinnamon and lemon juice. Stir together with a fork the brown sugar, flour, salt, butter and cheese; sprinkle over the apples. Bake at 350 for 30 minutes or until apples are tender.

Greek Grilled Cheese Sandwich

1 1/2 teaspoons butter, softened
2 slices whole wheat bread, or your favorite bread
2 tablespoons crumbled feta cheese
2 slices Cheddar cheese
1 tablespoon chopped red onion
1/4 tomato, thinly sliced

Directions
Heat a skillet over medium heat. Butter one side of each slice of bread. On the non buttered side of one slice, layer the feta cheese, Cheddar cheese, red onion and tomato. Top with the other slice of bread with the butter side out.
Fry the sandwich until golden brown on each side, about 2 minutes per side. The second side always cooks faster.
