I went to a cooking demonstration last Saturday. The guest chef was doing some fun things with specialty pasta. This is one of them. Quite delicious!

Pea Prosciutto Pasta

Prep Time: 20 minutes

Start to Finish Time: 20 minutes

Product: Rainbow Rigatoni

Servings: 4-6

INGREDIENTS

4 oz Prosciutto, chopped

2 tbsp Olive oil

3 Garlic cloves, sliced

1 tbsp Tomato paste

1 cup Pasta cooking water

� cup Heavy cream

1 pkg Rainbow Rigatoni

1 cup Blanched fresh peas or thawed frozen peas

2 tbsp Chopped fresh parsley

Grated parmesan

DIRECTIONS

1. Bring a large pot of salted water to a boil (water should taste salty like sea water). Add the Rainbow Rigatoni to the boiling water, stirring often and cook for 2 minutes less than the package directs � remembering to start the timer once the water comes back to a boil.

2. Once the pasta is cooked, remove about 2 cups of the pasta water, then drain in a colander and shake well.

3. Once you have put your pasta in the boiling water, you can start your sauce. In a large skillet, add olive oil and heat over medium heat. Add prosciutto and cook until crisp, about 4 minutes.

4. Add garlic and tomato paste, stirring until well combined and cook 1 minute.

5. Ladle in 1 cup pasta water and simmer until reduced by half, about 4 minutes.

6. Add cream and simmer until thickened.

7. Add cooked pasta, peas and parsley. Toss until well coated adding additional pasta water as necessary.

8. Season to taste with salt and freshly ground black pepper.

9. Garnish parmesan cheese

RECIPE NOTES

Replace prosciutto with pancetta or any cured ham

Increase or decrease garlic as desired

Replace parsley with basil or oregano
