So...let's talk about garlic!

I really enjoy garlic (more on that later). A long time ago, I was watching Graham Kerr do his thing on TV and he showed how to 'skin' the garlic and then dice it to itty bitty pieces. I do that. I mash it with the side of my knife and then the skin usually comes right off. HOWEVER, there are enough juices that come out too that the skins stick to my fingers and they just won't come off without washing them away in water.

Is there a better way of dealing with the moistened skins?

OK, follow-up. We were in San Francisco last month and ate at "The Stinking Rose" restaurant. Love it! The credit card statement shows "Stink Inc". The rose is garlic. They serve garlic with a side of food! It was soooo good! My breath was wonderful for at least two days. If you ever have the opportunity to be in San Francisco and don't mind eating with your neighbor's plate only 5" away, you just gotta go to The Stinking Rose.

OK...what about those garlic skins?
