can we talk about garlic?

How do you store garlic once it is peeled? I bought something called elephant garlic and the cloves are huge. I do not use a full one each time. I put in in the fridge and it went bad. One friend told me that she stores chopped garlic in olive oil. Another told me that can grow botulism. Wikipedia confirmed that is possible so I'm glad I looked it up. I questioned it at first. I mean how much can a guy know who would rather eat asparagus and broccoli than meatloaf or chocolate cake? Apparently more than I gave him credit for! I wonder why my Microbiology professor forgot to tell us about that!? Is it best just not to peel it until ready to use? I'd like to prepare it in advance so that it is easier to use when the time comes. I bought a jar of minced garlic, and it didn't last any time at all. Do you store it at room temperature or in the refrigerator? I do have a jar of garlic powder, but I try to use the real stuff whenever possible. I used the powder for garlic bread or when the real stuff is all gone or has gone bad. ALSO, what is your favorite garlic press? Do you use a food processor, mortar and pestle, or a dedicated garlic press? I just slice it up right now, or crush it with the side of a knife. I was looking at presses, but didn't like the ones I found. I'd like one that has teeth that go all the way through the holes so that it gets all the garlic. Thanks!
