what's yours?

Mine, peanut butter and jelly sandwich, tall glass of cold skim milk, and now a piece of chocolate for dessert. :)

Later, while watching TV I might finish off the kettle corn I bought day before yesterday. Twas a BIG bag.

White Beans and Sausage Source: David Leite's - The New Portuguese Table - My Family's White Beans and Sausage 1 pound dried navy, small California white or great northern beans, washed and sorted 1/2 pound bacon 1 large onion, chopped 3 cloves garlic, minced Bay leaf olive oil 3/4 pound Chourico, Linguica or Dry-Cured Smoked Spanish Chorizo cut into 1/4-inch slices 1/2 teaspoon dried red pepper flakes, or more to taste 1 tablespoon sweet paprika water ( I used chicken broth) Salt Freshly ground pepper 3 tablespoons tomato paste (squeeze tube) Fresh chopped flat leaf parsley Heat a large pot over medium low heat. Add the bacon and cook, stirring often, until the fat has rendered and the meaty bits are crisp, about 15 minutes. Using a slotted spoon, transfer to paper towels. Bump up the heat to medium, add the chourico and sear until lightly browned, 7 to 10 minutes. Transfer the chourico to paper towels. Pour off all but 3 tablespoons of fat from the pot. Or, if the pot is dry , drizzle in some oil. Add the onions and bay leaf and cook, stirring frequently, until deeply golden brown, 20 to 25 minutes, adjust the heat as necessary to prevent the onions from burning. Add the garlic and paprika and cook for 1 minute more. Drain the beans and dump them into the pot, along with the chourico and red pepper flakes, and 3 1/2 cups of water (I used chicken broth). Bring to a boil, reduce the heat to low, cover and let burble gently. Stiring occasionally, until the beans are tender. Begin checking at 45 minutes, but it may take as long as 1 1/2 hours , depending on your beans' add more water (chicken broth) if needed. Fish out and toss the bay leaf. Stir in the tomato paste and bacon and simmer for 10 minutes to thicken the cooking liquid. Season with salt and pepper to taste. Glenda, I always get my "Reuben" without the sauerkraut, since I'm not that fond of it. Chili sounds worth the trip back tomorrow. Nita, that sounds like good news/bad news. Bad news, no soup tonight. Good news, no cooking tomorrow!! Enjoy! YogaLady, how funny! We call it "Hunting and Foraging" when it's grocery day. And like you, I don't want to cook so I usually get a sub from the Publix deli. Our Publix is so darned busy--wish they'd build a new one down the road a bit. Enjoy your nice weather. Shirley, we're having chicken and wild rice soup one day this week. I made a list of menus for 7 days (which will actually last for at least 11 days with leftovers). I'm crazy for wild rice! Hope your snow melts--but it doesn't look like that's going to happen for a few days. Hope you don't have to go out in it. Azzalea, that really is a fun dinner. Harry loves it (and we don't need to tell them it's easy peasy! ;-) Pam, you poor little thing. Steak again--sigh! LOL! Sounds yum to me. Those mushrooms sound to die for. We got a Paula Deen ham and three 2lb.boxes of frozen macaroni and cheese (also Paula Deen) for Christmas. We had a ham at Thanksgiving that cost $1.79 a pound that was a lot better and we would rather have Kraft mac and cheese from the box. I have no idea what these things cost but the shipping must have cost a lot since they were in styrofoam boxes with dry ice. I think if they took away Paula Deens' butter and cream she couldn't cook. Hit the casino after work. Picked up $10 in a few minutes and left. Some juicy red tomatoes on the counter, and Happy Hour is pointing to a delicious BLT. Can sample some M&M's, cookies, and a banana split later. Dee, chili is simple to make. Cook up your veggies (onion, carrots, celery, mushrooms, green pepper, garlic), dump in the tomato sauce, add beans of any kind, then season with lots of chili powder and hot sauce. Easy freeze. Top the servings with fresh diced onion and grated cheese. 30 min max.

Baked pasta I threw together. Layered pasta, tomato sauce, mozzarella and chopped pepperoni. Very easy and fast. I think it will repeat often this summer. Only I was thinking next time I'll add some vegies, like olives, green pepper, onions... stuff you'd put on pizza. I'll call it Mom's Pizza Pasta Bake. I'm sure someone made it up before me. ;o)

Pressure cooked baby back ribs and then put the sauce on and put in the oven and fixed potatoes, yum it was so good and some left for my lunch tomorrow.

Our easy dinner last night will make tonight's dinner a cinch. I baked Bisquick chicken tenders, fries, and a salad.

Tonight will be reheated Chicken and left over salad.

Last night I had calves liver and steamed asparagus.
I also sauteed a large sliced white onion for an hour until it was carmalized and very sweet and buttery.

I hadn't had red meat in a couple of weeks and was having the period from "hell" after not having one for 7 months and thought I should up my iron intake so went to the store to get the liver. Not what I really wanted though. LOL

Anne-That sounds so good.I love liver smothered in onions.Haven't had it in years! DH will not eat it and can't stand the smell when it is cooking so I never fix it.I have tried eating it a few times at different restaurants but it just doesn't taste the same as homemade.I like fried chicken livers too and will order those sometimes but they aren't the same as smothered calf liver!
I think I may buy some and make it Saturday.DH and DGD will be going to the drag races so I can cook it without anyone else having to smell it,then Febreeze the house before they get back!LOL Yep,that's what I'm gonna do!
