What's for dinner on Saturday?

I put a super dooper dry rub on a rack of ribs early this morning and we put them on the coals a couple of hours ago.

I'll fix some doctored beans and my coleslaw later. Haven't made my sauce for the ribs, yet.

What are you good people having today?

Oven baked fish, yellow squash and potato/green bean salad.

I made meatballs, with a soy sauce, ketchup, brown sugar, vinegar, and garlic sauce. Sauteed cabbage, carrots and onions. Basmati rice as well.

I have Cooks Illustrated New Best Recipes cookbook from the library and they said that rice cooked with the 2:1 ratio of liquid doesn't make the best rice. They suggested 1 1/2 cups rice and 2 1/2 cups water (instead of the usual 3 cups). My rice was nice and fluffy, and separate grains.

Gadgets I am not sure where I read or heard what to do with it. It was either googled or from my brother who knows a lot about saving food. I think he learned it from my DM. Tonight I had the second piece that was supposed to be my DH until he told me he was going to be gone and it was just as delicious. I just used flour and Lawry seasoning salt and fried it. I think I have about 8 more pieces. Because we are Catholic I will try to use them during lent now on Friday's because we don't eat meat.

I must not be "normal"....I've had some wicked chills all day so it was leftover lentil soup for me. Robert went out to pick up a takeout order from a nearby Mexican restaurant.

..Asking me for a recipe isn't usually something I can help with. But I'll try! And I know that I said orzo but I MEANT coucous! But it sure would work with orzo. Fix 1 cup coucous and 1/2 cup red quinoi according to the directions on their labels. Be sure to rinse the quinoa first, and I prefer the red....it tastes nuttier to me. I cook both of them in chicken broth. This salad can be made just with quinoi, but I didn't want to scare my guests. :-) Veggies....to equal about two cups or more : chopped green onions, red bell pepper, english cuke, chick peas (rinsed and drained), halved cherry tomatoes. Use your favorite vinaigrette . I made a lemon dressing with quarter cup fresh lemon juice, quarter cup olive oil, two cloves minced garlic, chopped fresh oregano, sugar, S & P to taste, and a splash of balsamic or other vineger. I didn't use all of the dressing. Add it to the couscous and quinoi while still warm, cover, and chill. When ready to serve, stir and taste to add more dressing if necessary. I added a bit of lemon zest on top for serving and fresh mint from the garden .

Definitely summer here today. Clear skies after nearly a week of storms, with temps in the mid 90's and high humidity. Would have been a PERFECT pool day. We're cleaning out my dad's house to sell, though, so I didn't get to enjoy the weather. We were both tired after a long day (12 hrs incl. travel time), so we didn't feel like making dinner. We stopped at a local restaurant and got a burger, fries, and strawberry cake as takeout.

I have been absolutely craving boiled crawfish, they are in season and the signs are up all over town. I told hubby I had to have some today!
So this was my incredibly delish dinner.

Marigene, what kind of fish? I'm a big yellow squash fan and always grow as much as I can in my little garden.

Ooh, jasdip......your dinner sounds great! That cabbage must be so wonderful.

OK, Raven ....I'm officially drooling over those crawfish.

OF, we had brats not too long ago, always a tasty dish. You have quite the sweet tooth, don't you?

Jean...I hope that you can graduate to some real solid food soon. How long have you been ill? Have you been to a doctor?

I had my Goddess class from 3-5pm, so I licke up 'Pick Up Sticks' for us chicken for DH, tofu for me our first time~~it was so yummy!

Nothing.
Had a late lunch, and with this sinus problem,,,I can't taste or smell anything. so, not hungry.

Italian sausages with peppers and onions..
Green salad with carrots and cukes, kidney beans and corn plus homemade ranch and a sprinkle of feta..
Also grilled some chicken breasts for later.
