How Many Are Eating Leftovers For Supper?

I am, I just had some green beans, pineapple casserole, and I got some chicken I had fried and frozen out of the freezer and had that. I also ate some pistashio dessert Terri bought. My, my that is sweet! Norm loves the stuff, but I had forgotten how sweet it is. He can eat the rest! What are you eating for supper tonight? The sun is still shining here in central Indiana and I still have lots of bloomins'

We're having leftover baked ham, sweet potato casserole, deviled eggs and carrot cake for dessert.

Could you post the recipe for your pineapple casserole? It sounds like something hubby would like.

We're getting rain and lots of thunder here. Hope the power doesn't go out.

Leftovers here too.... grilled lamb, rosemary new potatoes, salad greens with diced peaches, feta cheese & walnuts. There's cheesecake, but I had more than my share last night.

My favorite of all favorites was fried chicken, or chicken fried steak, with milk gravy, and THEN serving leftovers with the chicken/steak heated in the gravy with biscuits for BREAKFAST! I am killing myself thinking about this!

I used to cook at home most of the time with an occasional lunch out with a friend and breakfast out with some of the few family I get along with. Over the winter my out-eating has increased dramatically. I found a few mom & pop places with wonderful breakfasts and good prices. One of them is open for evening meals too and I occasionally go there. Plus I go to Old Country Buffet for breakfast occasionally and have started going for a dinner more often too. Get there before 3:30 pm and you get the lunch rates and that's $3 cheaper. And figuring that beverages and dessert are included it's a good value. Food varies. Certain days have more to my tastes. And it's clean and well maintained, unlike most buffets. I generally eat only one "meal" per day. Might have a snack or something at home, but seldom have more than one full meal in a day and I don't remember the last time I ate breakfast, lunch and supper! When I'm going to have a long day at work I like to get a good old fashioned breakfast and that lasts me the day with the exception of a possible snack later.

On days I work I try to eat 4 snack/meals a day. I usually eat an egg or small portion of leftovers for breakfast with coffee. I wake up between 5 and 5:30. Around 10:00 I have Greek Yogurt and sometimes a few nuts. Some days I don't get to do this, especially if I have a busy group of patients. Lunch is usually a frozen dinner. I'm so sick of frozen meals. I keep changing brands but they are all bad for you and don't taste good. I have been buying mostly organic stuff lately but most of it doesn't taste any better. I buy them for convenience. Sometimes I freeze meals I make at home and take them instead. My dinner/snack in the evenings has been those P3 snack packs with meat, cheese and nuts. Fast and easy and are good source of protein. I do sometimes bring another meal but sometimes I don't get a chance to eat it because we're too busy, one reason I started taking the P3 snacks instead. I just stated getting meals from Hello Fresh. I'm alone at home now and find myself eating out a lot because I'm tired of cooking the same old things and then having tons of leftovers that get frozen or thrown out. On days I don't work I usually eat 3 meals but sometimes I forget to eat a 3rd and may just snack on cheese and a little fruit or nuts. I do sometimes eat things not good for me. Like bagels and cream cheese but usually only eat half a bagel at a time. I also like Skinny Pop popcorn.

My son brought me half of his turkey, dressing, I made some mashed potatoes and gravy to go with it. So what did I have? Leftovers of course, without having to make the 'firsts'.

My Easter dinner was comprised of left overs so we are going to have even more.
But I am going to use the roasted chicken to make tacos.
I want to go to Maura's house for her left overs.

We are--and probably still have lots for lunch tomorrow. I even saved the gravy and am heating it up. I've never done that before so I'm not so sure how it'll turn out. I love leftover nights!!!

I would love the pineapple recipe too...sounds yummy!

We didn't have a traditional Easter dinner. We celebrated on Saturday simply because we had friends over and thought it would be easier for us to all stay up late visiting where we all had to work today. I steamed crab with little red potatoes and corn on the cob and I made homemade hush puppies. It was so yummy! We had left overs last night. Tonight is soup and grilled cheese..it's been snowing all day here.

Leftover ham, mac and cheese, cauliflower and dinner rolls here. I had leftover beans for lunch. I think we'll be having leftovers all week. And I LOVE it :)

I guess my Mom and Dad are having leftovers since they had us all over for dinner yesterday. No leftovers here, I have chicken_ baking in the oven.

Took some leftovers to work to share...kalamata olives with cubed Greek feta, new potatoes with pesto, hummus, blanched haricot vert and red pepper strips.

Tonight, I'm having lamb and some couscous-quinoa salad...and fresh strawberries for dessert.

I think leftovers are my favorite food!

No leftovers here either....we went to a friends. Oh I do heave leftover asparagus. I plan on putting them in my salad.

Just done. Leftover roast lamb w/gravy, roasted veggies, and fresh asparagus.

Now I'm making stock from the lamb bone, and dividing the rest of the meat into two packages to freeze for shepherd's pie and lamb curry later in the month.

We had a casserole with noodles, peas and ham with a white sauce with cheese in, plus leftover cherry pie.

This is Glenda's pineapple casserole recipe:

GlendaÂs Pineapple casserole
1 cup sugar
6 tablespoons all-purpose flour
2 cups grated sharp cheddar **grate your own
2 (20-ounce) cans pineapple chunks, drained, and 6 tablespoons pineapple juice reserved
1 cup cracker crumbs --I use saltine, but ritz works too
1/2 cup melted butter

Preheat the oven to 350 degrees F.
Grease a medium-size casserole dish. In a large bowl, stir together the sugar and flour and pineapple juice. Gradually stir in the cheese. Add the drained pineapple chunks, and stir until ingredients are well combined. Pour the mixture into the prepared casserole dish. In another medium bowl, combine the cracker crumbs, melted butter, Spread crumb mixture on top of pineapple mixture. Bake for 25 to 30 minutes, or until golden brown.

i made a casserole left hubby eat,not me dialysis patients suffer alot from eating ham...I did today dont want to do it again,but boy it was good yesterday...I had a bowl of cheerios
