In the process of putting together a huge picnic for our group at the pool before all the kiddies are let loose from school and we're forced into the lap pool for the summer.

We've had a beautiful day here in Ohio today.....sunshine and in low 70s. Eye dr appt this morning. Spent good bit of time with cable internet today. Thought I was going to be out at least 36 hrs, but they were able to do something online. It's on now and I hope it stays. Young man is to call to ck on it in a little while.

My evening meal was WM brand battered fish fillets, sweet potato, and steamed corn.

patti, here's Dale's muffin recipe and they do have raisins.

DaleâÂÂs Bran Muffins

1 cup flour
1 1/2 cup bran flakes
1 1/2 tsp baking powder
1/2 tsp baking soda
1 cup sugar (or a little less)
1 tsp cinnamon
1/2 tsp salt
1 cup raisins, optional (or dried cranberries)
3/4 cup buttermilk
1/4 cup canola oil
2 large eggs

Combine 1st eight ingredients in bowl and mix well. In another bowl combine buttermilk, oil and eggs and beat until frothy. Make a well in center of dry ingredients. Pour liquid in middle of well and fold lightly.

Refrigerate 2 hours or over-night.

Preheat oven to 400ð.

Pour into muffin pan. Place in oven then immediately turn oven down to 350ð. Bake 20-25 minutes until browned and middle springs back when touched lightly.

Cool on wire rack for 10 minutes before removing from pan

Absolutely gorgeous day today! I've worked outside all day(with frequent breaks) getting the weeds out of my wildflowers. Fortunately we have a huge portion of Italian spaghetti from Louis that Bob had left on Sunday night so I'll make a salad and Ta Da....dinner is done!

Busy day at work today, we put down a truck load (1 ton truck) of mulch at one of our customers, another load tomorrow. I don't have a back or knee left & will be very glad when this job is done. Dinner was just sandwiches, something easy. It was warm in the 80's, can't wait for winter.

I am baking chicken breasts as we "speak"! I have no clue what direction they will take, when done. The possibilities (for ingredients on hand) are: on a green salad, in chicken salad, with veggies and pasta, or on a sandwich.

I don't have a clue. Nita and I stayed home this afternoon and loafed while my hubby, Nita's hubby and Tim went to Pittsburgh to ride the inclines. They had the nerve to come back with full bellies and aren't hungry now because they ate about 2 hours ago in Pburgh.. I just sent Nita and the guys off for a little sight seeing. When they come back I think I will set out all the leftovers from the last 2 days and call it all fair game. There isn't enough of any one thing for everybody. The choices will include Ramen cabbage salad, barbeque pasta salad, pineapple jello salad, ham loaf, pickled beets, sloppy joe, cookies, apricot nut bread, cranberry nut bread, and zucchini bread and 3 kinds of ice cream.

Beautiful day here today, but had to take mother and sister to some appointments so didn't have enough time to devote to my outdoor project. Lots of laundry. Meatloaf, eggplant and potatoes for dinner. Sitting now in a sunny room with lovely breeze and contemplating the chocolate cake with cream cheese frosting I made for hubby's birthday yesterday. Patti, is it Harry's INR that's off?

Have a leftover chicken breast that I am going to cut up and put in a salad.

It was hot here, 95 degrees, but it is supposed to get down to 32 degrees tomorrow night. The last four weeks this has happened, we have had warm, hot weather and then a freeze. Our wheat is ruined and can't even begin to plant cotton or peanuts.
What's for dinner, leftover steak fajitas, chips and salsa. I made it at lunch and took it to the field and just enough left for DH tonight.

Glad you all had good weather so you could be outside---well, except for Mary and Trixie! Geez, 95 degrees already.

I'm always late when I do post on 'What's for dinner'. My husband is up at 3:20 a.m. and I am up at 4:35 a.m. and we go to bed really early, so I never get online in the evenings..... But we do eat :-) So I like to post once in a while at least!

We had cheesy scalloped potatoes with ham, and baby lima beans for dinner last night, and a bowl of sugar free butterscotch pudding for desert. It was a pretty carb heavy dinner, but such a nice change from the usual.

Night before was a stuffed pepper half (stuffed with Spanish rice) and fresh asparagus... yummm.....

And the night before that was a big fresh veggie salad (cauliflower, green and yellow bell peppers, radish, green onions, carrots, celery) with a homemade honey raspberry vinaigrette!

So many good things to eat..... so few dinners in a weeks time!

I love to cook and to try new recipes, but I also like to fix our old favorites :-)
