The sun is shining now and then. It's a beautiful Good Friday here in Ohio. The smell of green beans, ham, and potatoes is filling my house with good smells.

So what's cooking at your house today?

Carrot cake whoopie pies..was banana cake ones earlier..

Dinner...who knows...we have a baseball game to attend shortly..could be sandwiches when we return, or leftovers. ;)

I have almond shortcake baking in the oven. Busy as a bee in the kitchen.

Hamburger Heaven for two bunless chili dogs was my lunch, today !

Chili, toast and a green tossed salad. Easy, peasy, 'cause tonight is game 7 between New York and Tampa Bay. Winner tonight plays the winner of tomorrow nights game 7 between Anahiem and Chicago for the Stanley Cup. Tomorrow night is the gang coming over for a BBQ to watch the big game.

I had an enjoyable husband-less evening last night. He went night fishing with a buddy; left around five and returned after eleven. I collected some garden veggies and made a quick stir fry with some thawed frozen shrimp, garlic, and ginger. Plus a nice glass of wine, long gab sessions with family and friends, Orange is the New Black binging, and I was a happy camper for a few hours, lol. He sent me text videos of the water, of fish they caught (and released), of bats swooshing around the boat lights, of the sunset, and even of their hilarious banter. So I had a great evening!

Just made some Caesar salad dressing and topped the salad with blackened salmon for DH. I was too tired to eat myself. Maybe in a little bit. Returned home from a golfing trip with the ladies….3 days of golf and late nights. Took one day off except for Mexican train last night and played golf today. Looking forward to a quiet weekend.

Jasdip, lol....I was absolutely being silly, but it turns out that the history behind the colorful name is murky, at best. All of the many stories go pretty much down the same path...it's fast and easy! We babysat for the two little girls who live next door with their grandfather, our much loved neighbor. He had his first date in the many years since his dear wife died! These little girls have real separation anxiety issues and this was the first time that he had left them at night since he took them into his home. I fixed 'breakast for dinner'; pancakes made to order, ham sausage patties, scrambles eggs, and fresh fruit. I let them pick out their pancake ingredients from little bowls of chocolate chips, chopped apple, blueberries, peanut butter, nuts, apricot preserves, and strawberry jam. Just one pancake each, but they really loved their whole supper.

We are supping on boneless skinless chix thighs, I am going to grill them but not sure what to sauce them with, left over risotto, and a large salad.... I do not have anything decent for dessert but chocolate ice cream with marshmallow swirl.

Angel hair with Trader Joe's meatballs(Italian style)

Side story: while checking out at a Trader Joe's, the cashier asked about the meatballs. I said my DH like them so I add pasta and sauce, done! She then asked if my husband preferred homemade meatballs! I said , I don't make them too often and really truly he is very happy with these.
Guilt trip, aisle 5.......;)

LOL ellendiÃ¢ÂÂ¦..no need to feel guilty, at least you're giving him a meal! We're having fish tacos. Never made them before but the recipe sounded good. Will let you know.

Gadgets, you are having one of my most loved meals! Now if one could have fresh from the garden sliced tomatoes on the side it would be a meal of perfection.

Not sure what we will have. DH and I both have to have blood drawn tomorrow morning and need a 14 hour fast. He is working in the yard and will be hungry when he comes in.. It can be tricky to balance his blood sugar so he can get through those 14 hours without needing to eat but not be too high in the am.

A cold turkey sandwich, a green salad with a chopped egg and sliced almonds for more protein and cantaloupe is what I have in mind.

Two of our daughters and their family are having a hurry up supper here tonight. So it is broasted chicken, mashed potatoes, gravy, broccoli, corn, coleslaw, applesauce and Hawaiian rolls. Alyssa has been here all day and so have Cheryl and Kevin, fun, fun.

Glenda: Are you having Easter at your house? I can't wait for the hotdog stand to open so I can have coneys....love them.

Sidnee: Everything sounds great, including the ice cream.

Ellendi: If it's easy AND good, how can you beat it!!

Gazania: Fresh from the garden tomatoes would have been close to perfection. I like what you've chosen for your pre-fast meal. Never thought to put almonds on a salad, but have used walnuts.

Sue: Sounds like you had a good, fun day. Your supper is my kind of meal. I could eat that once a week.

Monica: I could go for that meal. Had to look up scampi as I don't like shrimp breaded. I think I'd like it this way.

Shirley, I liked them a lot. The recipe called for a beer batter but I used a tempura batter. I found it to be nice and light. I will give you the recipe as I made it because I made some changes:

Tempura batter

1/2 C flour
1 tsp. baking powder
1/2 tsp. salt
1/2 C water

1 lb. cod fillets, cut in small pieces and coated with tempura batter. Fry in oil heated to 375 until golden brown (about 6 -7 minutes)

Sauce:

3/4 C plain yogurt (I used Trader Joe's plain Greek yogurtÃ¢ÂÂ¦it's the best!)
1/4 C. mayonnaise
1 lime, juiced
1 jalapeÃÂ±o seeded and minced
2 tsp. minced capers
1/2 tsp dried oregano
1/2 tsp. ground cumin
1/4 tsp. dried dill weed
1/2 tsp. ground cayenne pepper

corn tortillas, fried a minute or 2
shredded cabbage ( I used slaw mix)

I made Broiled Ginger Teriyaki Salmon, with Rice Pilaf and steamed Sugar Snap Peas.

And welcome back Shirley, glad to see you've gotten past the computer problems enough to get back online.
