I am actually cooking something fun tonight. Going into my archives I remembered a beef and broccoli recipe that I used to make. It includes carrots and oonions. Will serve over brown rice.

I'm just waiting for the potatoes to finish. Made salmon patties, boiled potatoes with butter and sour cream, and the french style canned green beans.

Vegetable Beef soup. Had to do a tour of nursing homes with mom today. Just got home and I'm so glad I had the where with all this morning to make a pot of soup. Atleast I can enjoy the rest of my day.

Jasdip, every time I read about salmon patties it reminds me of my mother. I was raised Catholic, so we often had salmon patties on Friday (back in the day).

Broiled Tilapia Recipe with Parmesan Cream Sauce

Creamy, cheesy, and just 6 Points +, this low calorie Broiled Tilapia Recipe with Parmesan Cream Sauce is a real dinner delight. It�s an easy dinner recipe that can be prepared in a pinch, and will be enjoyed by the whole family.
Ingredients

* 1 pound tilapia fillets (4, 4oz fillets)
* 1/2 cup Parmesan cheese
* 2 tbsp Brummel & Brown butter
* 1/2 cup plain, fat free Greek yogurt
* 2 tbsp fresh lemon juice
* 1 tsp fresh basil, finely chopped
* 1/2 of a lemon
* 1/4 tsp onion powder
* 1/2 tsp salt
* 1/4 tsp ground black pepper

Instructions

1. Preheat your oven�s broiler. Grease a broiling pan or line pan with aluminum foil.
2. In a small bowl, mix together the Parmesan cheese, butter, Greek yogurt, basil, lemon juice, salt, pepper and onion powder. Mix well and set aside.
3. Arrange fillets in a single layer on the prepared pan, and rub and juice the 1/2 lemon over the fish fillets before you broil them. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes.
4. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 3 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to over-cook the fish.

Haven't had salmon patties for a long time, sounds yummy. Any fish sounds good to me tonight, but I think I'll have soup too. Now which kind to choose.

Salmon patties are a good way to use up some leftover mashed potato. I use that and an egg for binder instead of bread crumbs. Dijon and hot sauce to give it some kick.

We love that for a meatless meal.

I had to go to the eye specialist today.....just love the annual dilation (NOT).....it won't wear off completely till tomorrow. The only good thing is that we got to go to one of our favorite diners....Heggy's. They make their own candy, ice cream, soups of the day, etc. I had a deviled egg sandwich and a bowl of clam chowder. Where you have to stand to pay is right beside all the homemade candies, but I refrained. The price had again increased so that made it easier to 'just say no'.

We had steak, mashed potatoes and overcooked broccoli. Two2.5 acres, did I miss something? Wondering why you and your mom were touring nursing homes. Don't mean to be nosy.

At the farm market Saturday I bought yellow squash still warm from the field, can't get much fresher than that, cooking the squash with some of the fresh tomatoes and onion I got there too. I will pan fry or blacken pork chops to go with it and some of the cukes sliced up on the side.

Ruthie-I'll have to try your parm sauce. We eat a lot of Tilapia and it can get rather boring after a while baking in the oven with lemon and butter!

Had lunch out after golf. Chicken salad scoops , a nice green salad and some fresh fruit. Had an Activia for dinner. DH just had a shrimp cocktail. I think he probably had something for lunch, too but is not owning up to it. I will have to cook tomorrow night for sure.

Tonight I fixed spaghetti, coleslaw and garlic bread. Have enough for leftovers tomorrow night. We will be in Tucson part of tomorrow so an easy dinner sounds great.

We went to friends last night with 2 other couples. Sheila was cleaning out her freezer and fridge since they are "snowbirds" here in Florida and will be leaving the end of the month. Thought we were just having appetizers, but she also made beef stew and pasta with rolls and garlic bread along with the 5 or 6 appetizers. Lol, we were stuffed! Also "forced" to finish up her wine and other bottles of spirits, ha!

Your not being nosey Pam_25f. Mom's husband is in the middle stages of dimentia/alzheimers. After a recent incident we decided for his safety and mom's health that it was time to start preparing for things down the road. I'm a planner and like to have my ducks in a row as much as it is possible with this disease.
