Beverly Grandma to be again!

Congratulations on becoming a Grandmother again! I know you Love the little guy you have now yet even more good times to come! Life is good being a Grandparent!

I have only been a Grandma for a very short time but I just love the time I do get with my little one!

Thanks Carlene. We are looking forward to enjoying another one. The only problem we see so far is DGS#1 insists the baby will be named Red Red. We don't know where this came from, but he always refers to the baby as Red Red and says he is getting a baby for his birthday. Not quite, but at least he is excited.

Congrats, Beverly! Being a grandparent is always more fun and two will double it. That name may just stick and if it's a girl, she may clobber him a bunch later on. LOL!

Here ya go Linda. Chicken Vera Cruz Ingredients 3 tablespoons olive oil Â¼ cup all-purpose flour salt and pepper to taste 1 large egg, beaten 1 tablespoon water 4 boneless skinless chicken breast halves, pounded thin For the sauce 2 tablespoons olive oil Â½ medium onion, minced 10 ounces fresh baby spinach Â¾ cup chicken broth Â¼ cup dry white wine 1 cup heavy cream cayenne pepper and salt to taste 4 ounces Monterey Jack cheese, shredded Heat oil in a large skillet. Beat water into the egg. Season the chicken with salt and pepper. Dredge each chicken piece in flour, then dip each side of chicken in egg wash, then back into the flour. Place into the hot oil in a single layer and saute to a golden brown, turning once. Cook about two minutes per side, until done. Transfer to a baking dish just large enough to hold the chicken in a single layer. Tent with foil to keep warm. Preheat broiler. Sauce Wipe out the skillet you cooked the chicken in and add the 2 tablespoons of olive oil over medium heat. Add onions and spinach; saute until spinach is just wilted. Remove from the pan and keep warm. Stir chicken broth, wine and cream into the skillet. Bring to a simmer and cook twelve minutes until reduced by half. Then add the spinach back in and season with cayenne and salt. Remove foil from chicken breasts and spoon sauce over chicken breasts. Divide the Jack cheese over the tops of each piece of chicken. Broil chicken 4 to 5 inches from the heat 2 to 3 minutes or until cheese bubbles and is light golden brown. Plate with your garnish of choice and serve.

Welcome, Claire! Always one of my favorite names. Happy for you, Grandma! Wow, that's a big baby; can understand the C-section. (I'm afraid my DIL won't want a second baby after delivering our DGS, whose head was in the 99th percentile.)

Thanks Kay. If it is a girl and she takes after her mom, she will indeed clobber him. I am looking forward to having a little one, but it has been a long time since I have had to take care of 2.

I'm happy for you, and big brother may be in for a few suprises if he/she is a girl. LOL

The new arrival is due November 5th-9th depending on whom you ask. DGS said it will be for his birthday (Oct 3rd) but he may be dissapointed. The ultrasound says it is a he, but DD and SIL are holding out hope for a girl. At any rate I think this will be the last till DD#2 gets into the game (she said she doesn't want any, famous last words).

Yes Kelly. I have started on a crib quilt and will have to make curtains for the room when they decide on a theme. I am afraid they are both last minute decision makers.
