Adopting a cat - how to know if it will get along with my dogs?

I've been thinking a long time about adopting a cat and have been waiting until the older of my two dogs goes on to that great dog run in the sky. However, she (the older dog) seems to be in great health and will (happily) be with us for a few more years, according to our vet. My question is, if I go ahead and adopt a cat, how can I best pick one who will live harmoniously with my dogs?

The two dogs are mutts. The older is a Rhodesian ridgeback mix who seems completely oblivious to the cats she sees in the vet's office. The younger is a Shiba Inu mix who would adore chasing squirrels if I let her off leash (I don't). She's the one I'm concerned about.

Would I do better with an adult cat (my preference) or a kitten? What should I look for in a cat and in my dogs to help me predict whether they'll tolerate each other? What's the best way to introduce them all?
