Ideas for Italian pot luck?

Our church is having an Italian themed potluck this Wednesday evening before the Advent service. No sign ups; we can bring an Italian dish, bread, or a dessert. I'm guessing that several people will bring store bought breads & desserts, and there will be some frozen lasagnas too. I'd like to make something homemade and not a pasta casserole. Perhaps a pile of meatballs? Any other ideas? Thanks!

Broccoli & cauliflower floret's, grape tomatoes and Italian dressing, the clear one, not the creamy it doesn't look as good... lol

I've done what Rita suggests and included strips of red peppers in addition to the tomatos. Dressed it simply with olive oil, garlic, salt and lots of lemon juice....sprinkled with parm to finish. Looked like the Italian flag!
You could make a couple of bracchiole. They would do well being kept hot and look very pretty and taste even better.

I am getting things potted up for the swap. I am focusing on bringing a smaller number of larger trades this year. I stopped by a nursery to find some cheap pots and talked them into selling me some of their 6" square pots (probably about 1/2 gallon ones) for $.20 each. Last year Oakland Park had nice 4" ones for $.09 each, but they didn't carry them this year. So far I have rhubarb, chocolate mint, lemon balm, spiderwort, lamb's ear, evening primrose, Golden Tiara hosta, misc. var. hosta, and Michaelinsis daisy potted up into 1/2 gallon or larger pots. I also have quite a few small starts of Penny's Worth daylily, a nice little daylily with yellow flowers. It kind of looks like a miniature version of Happy Returns. I also have plenty of tomatoes. I have about 60 varieties started this year. Some I only have a few of, but many of them I will have extras of to bring to the swap. We will be potting up some other things to bring as well. We usually bring the dogs into Columbus with us when we visit. But I don't see how they will fit in the van with all of the plants. It looks like we will have to leave them with friends for the weekend. We are looking forward to seeing everyone on the 15th. James

I usually prepare some appetizers and dessert. One of the recipies I do often is Onion Pakora. Try and let me know. I love pot lucks ..you can eat a variety of food and the best part is you need not prepare them all ;) lol! Ingredients: 2 tsp Ghee 1 pinch of Baking soda 1 cup of Bengal gram flour (besan) 1/2 cup of Rice flour 2 or 3 finely chopped onions (lengthwise) 2 Green chilies -- finely chopped 1 tsp Chili powder few cashew nuts/Ground nuts 1 cup of Cilantro (coriander) finely chopped 2 strands of Curry leaves Salt -- to taste Water -- as required Oil -- for deep-frying How to prepare: Place 2 tsp. ghee and baking soda in a mixing bowl. Rub together until frothy. Add the remaining ingredients and combine well, using sufficient water to make a thick batter. Leave it to rest for 15 mts. Heat oil in a heavy frying pan. Make small balls from the batter and drop them into the oil . Fry the pakoras until golden in color. When cooked, drain the excess oil on a sheet of brown paper or paper towels. Serve hot with chutney. This dish goes well with Mint chutney. You can also eat them without any side dish. Here is a link that might be useful: Recipes

I mix between three . . Broccoli Salad I used craisins(dried cranberries), broc florets, crumbled crispy bacon, sunflwr seeds(last time I used glazed cruchy almonds with great success), granny smith apples(peeled & cubed, tossed in vinegar to prevent browning), and dressing (vinegar, mayo, sugar). Add the bacon and seeds just before serving. I am always asked for the recipe. The other "standard" is my Cowboy Caviar. Basically, an uncooked salsa (tomato, cilantro, onion, garlic, lime, vinegar) then add 1 can each sweet corn, and black beans (both drained). Adjusting the acid (I love zing), and if I know people can take the heat, I used increase that, too! Serve with Tortilla "scoops". And a third . .Fruit salsa. What every fruit and berries and looking good. Usually Strawberries, raspberries, kiwi, granny smiths, 3 tblspn fruit preserves. Slice tortillas with pizza cutter, spray with cooking spray *butter flvr is best* and sprinkle with cinnamon sugar, then toast in 350 oven for about 8-10 minutes (till lightly brn).

Eggplant parmesan? You could broil the eggplant instead of breading and frying.

Tuscan Bean soup or Italian Wedding soup? Easy to do ahead and take hot in a crock pot.

What about manicotti? Not exactly a casserole. I stuff the shells when they are hard, then add plenty of liquid and cover with foil, and they cook just fine. I take a package of raw spinach and chop it up in my food processor. Then I mix it with ricotta (have even mixed it with cottage cheese) and parmesan cheese and an egg. Then stuff the shells. Either make a marinara sauce, or buy a jar of premade sauce and pour over the top, then add 1 cup of water, sprinkle with mozzarella, and cover with foil. Takes about 1 hour to bake it. Test it after an hour to make sure the shells are done. Fast, easy, delicious.

Thanks for the tip, Sherry! I love manicotti but hate trying to fill those cooked shells. I've even made crepes just to avoid working with those #%&* shells! Why didn't I think of this???

I would take sausage and peppers. You can get small rolls from the bakery and simply cut the sausages to fit the roll. The red and green peppers make it look festive!

If you are looking to take a snack/nibble then why not assemble an antipasta with assorted olives, roasted peppers, some fun cheeses, salami, artichokes ect...Add a rustic bread and some evo in a bowl for dipping.
