Substitute corn syrup for golden syrup?

I have two British shortbread recipes that call for 1 to 2 tablespoons of golden syrup added to a topping. I donÂt see having this around for a quantity like this.

Can I substitute corn syrup? Should I add a dash of molasses or maple syrup to it?

I'm pretty sure corn syrup is a close substitute. My Golden Syrup looks just like CS, but is made from cane sugar. The addition of molasses would make it something quite different, and I wouldn't do it.

If you use corn syrup it won't taste the same. Golden syrup has a very distinctive flavour.

kriswrite - you need to boil a lot of the water out of it. It does take a long time. IIRC, I would boil the peels and pits for 3 hours or so. And then it would be another hour or 2 before it would become syrup consistency. I would keep it on more of a low simmer at the beginning of the boiling process - so I could be doing other things. And then when it started getting close, I would turn it up to a full rolling boil and keep my eye on it. if you don't want to use a thermometer, you can test it similar to testing jam - put a bit on a frozen plate and check for thickness that way - you'll never be able to judge thickness when it is hot.

My recipe for Anzac biscuits calls for it.\ Anzac Biscuits Ã¯Â¿Â½ Dark and Crispy 350 degree oven 1 Ã¯Â¿Â½ cups flour 1 Ã¯Â¿Â½ cups sugar 2 cups rolled oats 2 cups dessicated coconut 1 cup butter 2 tablespoons golden syrup 1 teaspoon baking soda 4 tablespoons boiling water Bring small amount of water to a boil. Mix together flour, sugar, oats and coconut in a large bowl. Melt butter in a small bowl. Add golden syrup and baking soda dissolved in boiling water. Make a well in the dry mixture and add wet mixture. Mix thoroughly. Roll small, uniform pieces of dough into balls and place on a lightly greased baking sheet. Bake for about 12 or 13 minutes. These cookies are flat and crispy and would make good sandwich cookies. Excellent with tea.

I agree, the first two aren't actually maple syrup at all. I'd only eat/use the last one, because I AM a syrup snob, LOL. the grandkids like Mrs. Butterworth's, which has a lot of sugar/sweetener and artificial flavoring, but no real maple. I don't know what's in the sugar free stuff. The last one is what I'd use, love maple syrup. I'd not use the sugar free stuff to bake with, artificial sweeteners throw off the science of baked goods without careful substitutions. Lars, I thought of you last weekend, I was driving and passed a stand of sugar maples with the taps and buckets, it's been unusually cold here and they're still tapping. I need to pick some up myself, I'm told the local sugarbush is selling for $10 a quart. No grade, LOL, just "maple syrup", which means it's grade B or maybe darker. Annie

The medical community seems to always be finding new information and changing their minds. I have no idea what will be what in the future so I have opted to try, without going overboard, to look for more simplified ingredient lists. For me that's "sugar", 1 word, 5 letters, something I understand vs. "high fructose corn syrup" which is 4 words, way more letters and I had to look in up on intellipedia. So I look for sugar (or no sugar). Which made jams and jellies practically impossible (and I will always miss Welches Grape Jam). I finally found one that both has the fruit listed first and sugar, then pectin - and thats it, though it is stocked irregularly. Its Swedish! one flavor. As someone who eats lots of processed foods, I do believe your palate or tongue gets used to and then craves certain things - for me mostly salt. So much processed food has tons of salt! And I'm used to that and like it - but my mother goes nuts when I cook her Smoky Links and complains about all the salt. I suspect it will be as the others say with your Karo syrup.

I agree. You can use corn syrup but the flavor will be different. However, if it's a very small proportion of the recipe, then the difference will be minimal.

My suggestion would be to get the golden syrup and use it for recipes that call for corn syrup instead of the reverse. I haven't found anything yet that golden syrup doesn't improve.

A great place to check on substitutions for ingredients is The Cook's Thesaurus. The link below will take you to syrups (liquid sweeteners).

On a personal note, I avoid high fructose corn syrup at all costs, and use that wonderful, buttery-flavored, Lyle's Golden Syrup as a substitute for light corn syrup. I also use Steen's Pure Cane Syrup instead of dark corn syrup.

Thanks! That link to The Cook's Thesaurus is great. I have bookmarked it. Making your own sounds interesting too. Maybe I will try that if I run across more recipes that require it.

One I really likeÂavailable in most grocery storesÂ is Britain's own, Lyle Golden Syrup, derived from pure cane sugar.

If not available in your area, look for it online.

If it's a British recipe it has to be Lyle's Golden Syrup, altogether different taste than corn syrup. My DDMIL used to make a wonderful Treacle Pudding using Lyle's. Oh how I miss her Sunday dinners!

My Albertsons carries Lyle's...Safeway does not. So if you have a Albertsons or whatever other store is in their company..you may find it there.

I ended up ordering a case on Amazon. No shipping, keeps indefinitely and much cheaper than the stores in the Big City, especially if dividing the case with a friend.

Terri, thanks for sharing the homemade golden syrup. What a great backup idea. I'd like to try it with the Costco organic natural sugar. I'm thinking that might come closer to the taste of Lyle's than regular white sugar.
