Cooked the turkey breast: long cooking time

OK, I roasted the split (half) turkey breast at the recommended temperature (325). I estimated 20-30 minutes per pound, and since the breast weighed just under 3 pounds I figured 90 minutes. Well, it took almost 2-1/2 hours. Our oven runs about 25 degrees HOT so I always set it 25 degrees lower. That works well for baking cookies and if I forget to set it lower, things get too brown too soon.

The flavor was delicious, no complaints there, and I would definitely make it again.

The breast is bone-in, cooked skin side up on a rack in a shallow roasting pan (the sides of which are about 2 inches tall).

What could have affected the cooking time to take it so much longer than expected?
