Dark Chocolate Orange Cake & Frosting

Okay Michelle, here's the recipe that was used for atleast the last 30 plus years.

Black Midnight Cake

2/3 c soft shortening

1 2/3 c sugar

3 eggs

2 1/4 c flour

2/3 c cocoa

1/4 t baking powder

1 1/4 t baking soda

1 1/3 c water

1 t vanilla (plus 1 t of orange extract)

Grease and flour pan(s). Preheat oven to 350F. Cream shortening, sugar and eggs until fluffy. Beat 5 minutes on high speed or by hand. Bleand flour, cocoa, baking powder and soda. Add alternately with water and vanilla. Use low speed to blend. Pour into pan(s) and bake for 40-45 for 9x13 and 30-35 for 2 layer pans.

Hershey's One Bowl Buttercream

6 T butter or margarine, softened

Hershey's Cocoa:

1/3 c for light flavor

1/2 c for medium flavor

3/4 c for dark flavor (This is the one my mom used.)

2 2/3 c confectioners' sugar

1/3 c milk

1 t vanilla

For orange frosting: 1/2 t vanilla plus 1 t orange extract

Of course now I'd use OJ for the water and probably some orange zest.

But this was the cake my mom made for special occasions. Birthday's or potlucks.
