So I tried making Sour Cream Walnuts tonight...

...and I think it was a flop. I cooked the mixture until my thermometer held steady at 240, turned off the heat, added the vanilla, then the nuts. I stirred to coat and with difficulty, spread the nuts onto a cookie sheet to cool.

The coating was very thick, kind like 3 c of nuts wasn't enough for all that caramel. As they cooled all except two nuts had their coating become cloudy from the sugar crystallizing. So their coating is kinda like a fudge texture, but less creamy. It's not supposed to do that, is it?

So do I put these in a bowl and serve them up, or do I send them to work with DH (his coworkers will eat anything). They're not sticky, and they do taste fine. I just am concerned that they're an obvious flop, so I'm hesitant to put them out for a party.
