Do you have grand-kids, or are you expecting any near your guest bedrooms? If so, do consider having tubs (at least a small 5 foot inexpensive one) for baths. You won't regret that, especially for resale. As for your Master Bath, ask a realtor friend and they will likely tell you it's 'best' for re-sale for a 5-piece Master too, but if you'd much rather have the extra-large shower than a smaller shower and tub, then go for the larger shower and forget the tub. We have an oversized shower (dual heads, etc) and absolutely love it. We have a big jacuzzi tub too and it's nice but doesn't get a whole lot of use. Our overall bathroom is quite large, but if I were limited on space, the tub would be the first to go or at least downsize. As you age, you will probably find a better use for a walk-in shower with things you can add in your later remodel (hand-held rails, bench, etc) than a tub that is hard to step into.

agree with ravencajun that there are some really nice handhelds out there that rival or even beat a basic fixed head, plus their utility for cleaning is critical to me. Another option is to place the handheld on a slide bar so you can adjust to different heights. This is especially nice for kids or folks with very different heights. Unless you have a wide tub, I would be inclined to go with a really nice handheld on a bar and the tub spout, otherwise as linelle pointed out it will get busy with so many fixtures. Plus you will need additional diverter valves and trim for extra fixtures and you may decide that money might be better spent on upgrading the shower head (or some other part of your redo) We went all out in ours, but it is a good sized shower only - but you can see what it looks like in the picture below with two fixtures on one wall. Are you talking about having the hose come out of a trimmed hole in the tub deck, like a kitchen sprayer? Most faucet companies have trim for that purpose for their handshowers. Kohler calls them "handshower hose guide" or "deck- or bath-mount handshower holder". And then you need to attach the hose to a diverter valve from your tub filler faucet. Here's one that comes with a diverter valve:
