Rice flour in the latkes?

So instead of a Xmas Open house this year I'm doing a Shiksa Latke Supper for family and a few friends. Usually I do one just for Norm's family and my sister's. One of our good friends is not only vegetarian but has discovered she is celiac. So do you think it will make any difference in the latkes if I use rice flour? I'm making potato ones and then either sweet potato or zucchini? The recipes use so little flour or matzo meal that it shouldn't make a difference. But maybe you know another sub that will keep them crisp?
