First things first.

Have you ever made this recipe before? Different oven? Did you cook it straight from prep? How long did that take?

Have you used an oven thermometer to check the temperature.

Next, how new is the oven. The factory default setting is for European voltage which can throw off the temps a lot. A call to Miele tech service can walk you through reprogramming to USA voltage. Don't think they'll be open though till Monday. Your installer should have done it but ours didn't. Ask me how I know ;-)

BTW, the only master chef program I use is to cook Turkey and boy is it good.

If I were you I'd run to the grocery store and pick up an oven thermometer. You can at least use that to get the oven to the temp you need even if that is not what is showing on the panel.

Yes, I've made this recipe before...different oven and it didn't take as long as this. It wasn't straight from prep but I know I probably brought it to room temp first and still it didn't take that long. I have an oven thermometer but Miele says you cannot go by them because these ovens are built differently and you never get a true reading on an oven thermometer...whatever that means. The oven is three yrs old and I've had them here several times to check it out. They keep telling me nothing is wrong. The voltage has been changed from the beginning. The other thing...during cookie baking....I found they didn't baking evenly either. The front rows browned quicker. I had to keep switching them around....and losing oven heat in the process. Again I had them here last yr and even baked a batch while they were here. They just keep telling me to take their cooking classes. I asked them to check the oven temperature but they said they have no way to do so.!!!

I used the Master chef program the other day to roast a ham. It was nine pounds which according to the pkg should take about 2.25 hours. I set my timer and still used the probe. When the timer went off the master chef said another hour. I checked for the 140 degrees and it was almost there. I let it in for another 20 min. and checked again. it was done according to my meat thermometer.

I just don't trust this oven. Christmas dinner should be fun tomorrow!!!

That's a real pity. I love my ovens NOW but there was definitely a breaking in period.

Let me also say that your ovens may still be under warranty but even if they are not, you should ask Miele to replace them.

I got my ovens just before Thanksgiving 2007 and dinner was FINALLY on the table at 7 pm (should have been around 4:30). I thought maybe it was just because they were new ovens and I'd been used to cooking in a piece of junk and just didn't know what I was doing. BUT I'm a great baker and my cakes, cookies and pies were not cooking.

I bought a thermometer and found the oven temps were around 50* too low! I called Miele who had me fix the voltage which didn't help much so they sent out a tech WHO DID have a thermometer to measure and who agreed with me. Told me to preheat for an hour. I said OK let's do it. Made him coffee and we waited. Those ovens never did come up to temp. So he came back two weeks later, changed out some computer part and we tried it again. Nope, no luck.

I wrote letters to Miele in Germany, cc'd the USA president and finally got a call from New Jersey that they would replace the ovens or give me my money back whichever I wanted. I wanted the $$$ LOL but my custom kitchen cabinet would have cost $550 to modify for replacement in a different brand so I had them send new ovens.

The tech came back, fixed the voltage, checked the calibration and I now have ovens that I love that cook perfectly every time.

I have noticed, along with other Miele oven users on the GW forums, that their convection baking is the same time and temp as the recipe calls for. It is not any faster. Thay wasn't a key feature in buying this brand so I am OK with it.

Now that they work properly, I love the way my Turkeys cook. I use a probe and they are perfect every time. I've also cooked six trays of cookies at a time that come out almost perfect - I know I have a hot spot on the top rack back right hand side but even those cookies are just "more" cooked, not burnt. I don't switch my trays around.

You can check your state laws as well for lemon coverage. I'd be raising a stink come Monday and finally getting the ovens replaced or your money back especially if you can document all your problems and service calls.

Need to add that ALL my cookie, casserole and most baking is done on convection. I NEVER use the standard baking setting for anything.

I use intensive for Pizza, Surround for souffles and angelfood and broil where required

Yes, I want to echo that you need to ride Miele. They will come back if you complain often, even out of warranty. I had an independent repair guy that Miele recommended come out for a call on my dishwasher after the warranty ran out. I've also paid for factory service. Twice they've sent out some special tech and he worked for awhile and couldn't duplicate the problem. He did change a couple of parts and now the problem has only happened twice since. But my point is that they did respond 4 yrs out of warranty. I'd change out the dang thing, but I love the cutlery tray and the silent cleaning. The problem could also be the way that the construction crew plumbed the sink too, so I can't blame Miele for certain. I told Dh that I'd pull it and change it out, but who knows if the new one would drain any better. Plus my dw is integrated with a wood panel, so that would be difficult to match and expensive to replace. Sigh...

Well, I plan to call Miele on Mon, again. I know I am not a major PITA and find I give up too easily. But I am really frustrated. I don't use my oven everyday so it always seems that it is this time of yr that it chooses not to perform well. I guess it is because it is only me and DH and it really doesn't matter how long the dinner takes to get done on a day to day basis. But it is when I have a house full of people asking "what time is dinner" that I get all stressed out and mad. I have to say my SIL the chef told me my 9 lb prime rib should only take 1.5 hours to 140 and it did. Why would a cookbook say that size roast should take 2.5 to 3 hrs. That is what I find so frustrating. It did get done by the way, so we just shut the oven off and let it sit...it was only warm when I served it...not the greatest. The potatoes I put in the oven early on low to heat them up then cranked the oven up to 375 to finish So I couldn't really say how long they took but they were in the oven a very, very long time.

If I use convection bake for a casserole it always seems the outside edges eventually start to bubble (after much longer than the recipe states) but the center is never cooked or sometimes not even hot. I have been using surround bake but then the cheesy tops get too dark.

So I'm going to call Miele again....and then if I have to, write the Co. I don't know what they will do. This oven is my second one already due to a broken hinge on the original one's door. Both worked the same.
I don't know what else to say to them at this point. I think, they think I am crazy or stupid or just a PITA customer.

Oh, I wanted to mention that I did roasted asparagus tossed with olive oil and thyme for Ch. Eve. I had preheated the oven to the stated 425. After the 15 min it was supposed to take the spears were barely cooked...still crunchy. Actually the recipe said 10-15 min....Ha Ha Ha. I raised to oven temp to 500 and gave it another 5 minutes..finally got done! Crazy Huh??And these were thin spears not thick ones either.

Yikes!! Please get an oven thermometer and test it. Oven thermometers really do work, no matter what Miele says lol

You have every bit of my sympathy, Kathie. I've had some of the same problems with my new Monogram ovens. Two visits from the service tech, and no acknowledgement that anything is amiss with the temps. They told me to call customer relations rather than service next time. You bet I am calling Monday. So, don't give up!

Hi to all who responded to my OP. I wanted to update you all in the event you have issues that need to be resolved.
I called Miele right after Christmas and scheduled a service call asking specifically that the tech bring some sort of tool to check the oven temps. I also asked that the $175 fee be waived since this has been an ongoing problem.

The techs were here (the same ones who were here last yr....I kidded them about this being an annual event and the one remembered me as the "cookie lady" because the last complaint was around my cookie baking time. Anyway, they checked the oven temps in several areas...all checked out accurately (unbelievable), they pulled the ovens from the wall to be sure they were getting adequate ventilation...(installation was perfect). They checked all the settings and programs (no faults) So they decided that only thing they could do at this point was to get approval from a supervisor to replace the bottom elements in both ovens as well as the electronic components. (YEA!!!)Luckily I had pictures of some rolls I had baked at Easter last yr. I put three trays in the oven at the same time and the top tray burned while the other two were quite light. They finally agreed that the oven is not baking as it should. A picture is worth a thousand words!!!!

The one tech said he has seen the problem before and the replacement of those parts was the solution. So I am hopeful that after next Tuesday, my ovens will be working properly and perfectly.

So thank you all for encouraging me to continue to complain to Miele. They didn't charge the service fee even though the ovens are out of warranty. They were very nice about the whole thing. If you are having problems, take some pictures of the food that didn't come out the way it should have. Those pictures seemed to have made my case.

loves2cook4six, I had an oven thermometer in the oven when the tech arrived and I told them that from what I could see the differencee between the oven and the thermometer is about 25-50 degrees. Again they told me they will never give you an accurate reading and they took the thermometer out of the oven. I really wanted to see how hot the oven was on the SEARING setting because I never get a good sear on any meat I do on auto roast. It sure is not anywhere near 425+.
