Lasagna Noodles

Seems to me I have read where u can make lasagna without cooking the noodles first? Does anyone here know if this is so?

You can. I've done it, and used more sauce, to compensate.
I also covered the pan with tinfoil for a while, then uncovered.
Turned out fine.

Yes you can! There use to be a recipe on the box for "No Boil Lasagna". That's the only kind I've ever made.

Check on the box of noodles for a recipe. I always "tweaked" the recipe adding stuff...and leaving out stuff! lol

AFAIC all lasagna noodles are "oven ready"! And no boil on top of it unless you want to. Slippery wet noodles after cooking is easily eliminated. I put them in a colander and drain them after cooking and rinse them with cold water to stop cooking. Let them drain in the colander while I prep stuff and they dry off a bit and are easy to handle. But I've quit boiling the noodles. I sometimes will soak them a bit to make them flexible and easy to trim if needed but don't bother cooking. The trick to using dry noodles is to have them completely submerged and I cover with foil or cook in the Nesco. They cook in the sauce. Add a little extra water, beer, wine or whatever to make the sauce a little thinner to cook them and the sauce will thicken up as you cook it off.

This is all very interesting. . .I always use homemade noodles when I make lasagna. (Which is why it is my boys favorite meal - and why it takes longer to make and I do it less often.) My noodles are made only from eggs and flour (in the food processor). I roll them as thin as I can with my Atles and cut each sheet in half length wise. I gently boil them until tender (not very long) and then proceed with the meat sauce and cheeses. I try to always make extra for the freezer. I prefer to use a mixture of sour cream and cream cheese in place of the cottege cheese. (I think it looks prettier and sets up better; it's more fattening but probably costs about the same.)

No-boil lasagna noodles

Reporting back on the lasagna made with Barilla no-boil noodles. It was very good and a hit with everyone, vegetarians or otherwise. I forgot to take photos but there are some with the original recipe link. Mine looked similar but not quite as nice! I did not presoak the noodles, added 1/4 cup water after assembling, used 2 cups milk (recipe calls for 1 cup) and needed to cook it for an additional 15 minutes because the noodles were not done. I needed to use about 2 cups of milk to get the squash to the correct consistency. I roasted the squash a couple of days before assembly...maybe that made it drier. Even with that there was barely enough to cover each layer. But more might have made the flavor overpowering. The chard was almost non-existent in the end. I probably cooked it too much before assembling. I don't think I would add more of the squash, veggies or cheese as the flavor balance seemed just right for me. Here's a good home made sauce recipe: Brown: 1 lb. of Italian Sausage or ground beef Chopped onion Minced garlic Add: 2 lb. diced or whole canned tomatoes 16 oz. tomato sauce 6 oz. sliced mushrooms 1/4 C. parsley 1 1/2 tsp. Oregano 1 tsp. salt 1/4 tsp. thyme 1 bay leaf Simmer uncovered 2 hours, stirring occasionally.

Me, too, I never cook lasagna noodles. I use regular noodles, not the box labeled "no boil." I also cover the pan with foil while it bakes. It works best if I make the lasagna ahead, let is sit for a couple hours in the frig, then bake it.

I have let the noodles sit in hot water (I have an instant hot tap at the sink). But honestly, I don't think it mattered at all. I just saw it done on a cooking show and thought I'd see if it did matter.

I use them uncooked in the recipe I have, which called for them, to make a quicker 'Skillet Lasagna'- which is done in a deep skillet on the stovetop. Until recently..I couldn't get the 'mini' noodles but they are now in my grocery store. Have to admit-took me awhile to use raw noodles instead of cooking them first!

I used to do that with the regular noodles and it worked great.

The above hints are great.

I use the noil-boil thin noodles now. I like them much better - they taste more like homemade in the finished lasagna.

I never cook the noodles before baking and I think the lasagna is much better.

I always buy the one that say "no boiling required" on the package. They always turn out perfectly.

I, too, do it with the regular lasagna noodles. I just pour about a half a cup of water around the outside edge of the lasagna, then cover with foil and bake until done.

The lasagna is so much better that way--it sets up nicer and is easier to cut. And the fact that it's simpler to make doesn't hurt either!
