Cathy : How did I miss your Message ??? Sherry :This started when I asked my butcher to slice some Sirloin thin for Sandwich Steaks. He sliced them a little too thick for Philly cheese Steaks. Sooooooooo !!!! I used my imagination and came up with this.Not hard to do. Just found the recipe: From Luigis Kitchen Stuffed, Large Roasted Braciole , Surf and Turf. I dont think this has been done before but Im not sure. Here are the Stuffing Ingredients: Seasoned Bread Crumbs, 2 cups, with Garlic powder, 1/3 teaspoon Onion Powder, 1/3 teaspoon Salt and a Pinch of Old Bay Seasoning Parsley Crushed , 1 teaspoon Parmesan Cheese I tablespoon 1 Tablespn. of Pwd. egg, or 1 egg mixed with the 1/2cup water, below 1/3 cup of Onions chopped small and cooked 3 min. in Micro Wave ¼ teaspoon of Black Pepper Mix all these ingredients together well. - - - - - - - - - - - - - - - - - - - - - - - - - - - - - Other Ingredients for the stuffing are; 2 Hardboiled Eggs, sliced. ½ cup of Olives and Capers chopped Mushrooms ( optional ) Cooked Shrimp Pepperoni pieces Also, add whatever you like . Maybe some Provolone Cheese? - - - - - - - - - - - - - - - - - - - - - - - - - - - - - If using regular egg ,mix in here, when cool. In a ½ cup of hot water, mix 1 heaping teaspoon of, Chicken Soup Base and add this to the Bread Crumb mix. Dont mix too much ! And just blend to dampen, Not too wet. Lay one piece of Steak in a large Platter or whatever you choose. The piece in the Photo is about 6 in. X 12 in. Spread all the Bread Crumb stuffing mix on this evenly. Place all the Other Ingredients on the stuffing evenly. I put smaller pieces of the steak under the side and let them hang out for wrapping the Braciole as it is rolled. Lay another large piece ( the same size, as the bottom piece of the sirloin. Start rolling the steak, folding in the side pieces as you go. Hog tie the whole mess very good !!! I Browned this well and put it into the Waterless Roasting Cooker With 1/2 cup of water Now it is Ready, to go in the Oven with the Potatoes It baked 1 ¾ Hours,at 350 deg. The internal temperature went to 160 degrees.

I happened to catch Throwdown with Bobby Flay yesterday; it was lasagna. The judges reviews of his spin on lasagna had me drooling. Heat the oil in a large Dutch oven over high heat. Season the shanks on both sides with salt and pepper, place in the pan and cook until golden brown on both sides, about 4 minutes per side. Remove the shanks to a plate. Remove fat from the pan. Add the pancetta to the pan and cook until golden brown. Remove pancetta with a slotted spoon to a plate lined with paper towels. Add the onion, carrots, celery and garlic to the pan and cook until soft and lightly golden brown, 4 to 5 minutes. Add the red wine, scrape the bottom of the pan and cook until completely reduced. Add the beef stock, diced tomatoes, thyme, rosemary and parsley and bring to a simmer. Add the shanks and 1/3 of the pancetta back to the pan, cover and transfer to the oven. Cook until the meat is tender and falling off the bone, about 2 hours. Remove the shanks to a cutting board and when cool enough to handle, shred the meat into bite-size pieces and place in a bowl. Strain the cooking liquid into a bowl. Place 3 cups of the cooking liquid into a large high-sided saute pan and bring to a boil over high heat. Cook until the liquid is reduced to about 3/4 cup. Add the shredded meat and the remaining cooked pancetta to the pan along with 1 cup of the tomato sauce, parsley and basil and stir to combine and just heat through. For the Ricotta Mixture: Stir together the ricotta, eggs, parsley, basil, cheese and salt and pepper in a bowl. Cover and refrigerate for at least 1 hour to allow flavors to meld. For the Tomato Sauce: Heat the oil in a large saute pan over medium-high heat, add the onions and cook until soft, 3 to 4 minutes. Add the garlic and red chili flakes and cook for 1 minute. Add the tomatoes, bring to boil, season with salt and pepper and cook until the sauce is reduced and thickened, about 25 to 30 minutes. Stir in the parsley and basil. For the Bechamel (Mornay) Sace: Melt the butter in a medium saucepan over medium heat. Whisk in the flour and let cook for about 2 minutes. Slowly whisk in 2 cups of the hot milk and continue whisking until the sauce is thickened and loses its raw flavor, about 5 to 7 minutes. Season the sauce with nutmeg, salt and pepper and whisk in the cheeses. If the sauce is too thick, whisk in some of the remaining milk. For Assembly: Preheat the oven to 375 degrees F. Butter the bottom and sides of a 9 by 13-inch baking dish with the butter. Ladle a thin layer of bechamel evenly over the bottom of the pan. Place a layer of pasta dough, cut to fit the inside of the pan on top of the bechamel and top the pasta with the ricotta mixture and spread evenly. Spread a thin layer of bechamel over the ricotta, sprinkle with a few tablespoons of Parmesan and some basil leaves. Top with another layer of pasta and spread the meat mixture evenly over the top. Ladle an even layer of bechamel over the Bolognese mixture, sprinkle with a few tablespoons of Parmesan and some basil leaves. Place the final layer of pasta dough over the meat mixture and ladle the bechamel over the top to completely cover the pasta and sprinkle with 3 tablespoons of Parmesan. Place the pan on a baking sheet and cover loosely with aluminum foil. Bake for 20 minutes. Reduce the heat to 350 degrees F, remove the foil and continue baking until the top is golden brown and the filling is bubbling, about 25 to 35 minutes longer. Remove from the oven and let rest 10 minutes before cutting. Cut into slices and top with some of the tomato sauce, more grated cheese and chopped parsley and basil. AFAIC all lasagna noodles are "oven ready"! And no boil on top of it unless you want to. Slippery wet noodles after cooking is easily eliminated. I put them in a colander and drain them after cooking and rinse them with cold water to stop cooking. Let them drain in the colander while I prep stuff and they dry off a bit and are easy to handle. But I've quit boiling the noodles. I sometimes will soak them a bit to make them flexible and easy to trim if needed but don't bother cooking. The trick to using dry noodles is to have them completely submerged and I cover with foil or cook in the Nesco. They cook in the sauce. Add a little extra water, beer, wine or whatever to make the sauce a little thinner to cook them and the sauce will thicken up as you cook it off.

Another option is to make the noodles yourself - then they do not need boiling. I make lasagna frequently and have not bought noodles in longer than I can remember because they are so easy to make. For a 9x13 pan I use 1/2 cup white flour, 1/2 cup whole wheat flour, 1/2 cup semolina, 1/3 tsp salt, and three eggs to make the dough. I mix/knead the flours with salt in a bowl first and then add the beaten eggs. This makes a somewhat sticky dough, but I then knead it on the counter until it is not too sticky. Then I put it in a ziplock bag for about an hour (30 minutes minimum) before putting it through the pasta machine. I used to use a hand-cranked machine, but ever since I got an attachment to my KA mixer, the rolling out has gotten so much faster and easier that I make the lasagna that much more often. I generally only roll the dough out to #5, as I want it somewhat thick, but I think you can stop at #4 if you want it even thicker. Once the dough is rolled out, I hang it on a broomstick until I am ready to assemble the lasagna. I normally make the sauce and fillings while I am letting the dough rest in the ziplock bag, and so by the time I roll it out, I am ready to assemble. No need to boil fresh pasta before assembling it, but I do spray the top of the pan with a bit of water before baking, and I always cover the pan. The pasta will absorb some liquid while baking, but not as much as dried pasta would. I almost never put meat in my lasagna (occasionally I put Italian meatloaf in my sauce), and so I'm not sure how it would work with that.
