I bring a pot of water to boil, put the noodles in and turn the water off. I find that while I build the lasagna, the hot water softens the noodles enough. I don't like cooking them completely because I always end up cooking them too long, and they get too soft and tear easily.

If you don't boil them at all, I wuold cook your lasagna a little longer (15-20 mins) and add a little more sauce than usual.

When I make fresh lasagna pasta, I don't cook it in advance. It goes straight into the lasagana and cooks more than adequately during the baking of the lasagna.

It's not so much a matter of moisture; it's a matter of cooking enough to get rid of the "floury" taste and the lasagna baking time does that.

I make my lasagna with fresh noodles all the time...as a matter of fact I have a pan in the oven as I key!

I always boil them just a tad....in and out of the boiling water...count 10 slow boats!

This makes them pliable and tender and just perfect in my view.

Light on the meat, lots of sauce, three or four type of cheese but not too much of any one....and I'm in heaven! Perfect Lasgana for us is light not heavy.

Well, I may have to try both methods. Half one way and half the other. Hope I don't forget which half is which!

I use fresh noodles for lasagna too. One of the reason I do is because you don't have to cook them first.

When I make my own noodles I don't boil them first. But I found I needed a bit more sauce, too.

When you are baking the lasagna with fresh non-boiled noodles, do you cover the pan at all during the process??

I made lasagna with fresh noodles this morning. It was always a challenge to make the noodles fit the pan and get them in without tears. Freshly made is much easier! The noodles were used without boiling first. DH and DS liked it. I thought the noodles had a bit of the taste of flour. next time I'll baptize them by emersion before layering the lasagna. I didn't cover the pan; perhaps I should have done.

DS said I could make a 'ton' of money opening a restaurant in the Village where he goes to college-no one makes anything like this or this good. Oh sure, I got up at 6:15a I'd never get food on the table in a restaurant :-)
