Need advice: butter/brown sugar topping turns grainy

The last three years I have been assigned my mom's Sticky Buns (also known as Monkey Bread) recipe for our family's Christmas brunch, and every year something goes wrong!

First, here's the recipe:

22 frozen rolls (I use Rhodes white dinner rolls)

1 stick butter

1/2 cup brown sugar

1/2 package butterscotch pudding mix (non-instant variety)

1/2 cup chopped pecans or walnuts

"Sprinkle chopped nuts into a bundt pan, top with rolls, then sprinkle butterscotch pudding mix over rolls. In a small saucepan, melt together butter and brown sugar, boil 3-4 minutes until caramel-like, then pour over rolls. Cover with plastic wrap, let rise several hours or overnight. Bake in 350 degree oven for 25 minutes. Let cool 5 minutes and turn out."

This year and last, the topping (which should be nice and drippy and caramel-y), turned thick and grainy once the rolls had cooled to room temp. I don't make these but once a year and I'm not much of a cook so I am struggling to understand they why's behind the problem and how to fix it.

I'd really appreciate any advice you may have.

Thanks!

April
