Using mini tart pans

Hello. I hope I do not offend but I did a search and could not find an answer.

I am going to be using mini tart pans for the first time. I'm making a fruit tart, just the shell will be baked.

The pans are not the super-small one-bite pans, they are about 4" diameter with removable bottoms.

Following the recipe instructions, I'm going to bake the shells using parchment paper to protect the shells from the dried beans which will be the weights.

We don't have a "real" oven, just a pretty good toaster oven/convection oven. It works great, even for cakes. Not sure if this makes a difference.

Last bit of possibly helpful info is that I live above 8200 feet, but I've made this pie crust/shell before, just in a regular glass pan, a heavy metal pie plate and a porcelain pie pan. Works great.

First question: Do I need to use a pan underneath the tartlette pans? I ask this only because the pans seem somewhat insubstantial.

Second question: The instructions do not mention using any kind of non-stick methods; no butter, grease or either of those with flour. Should I grease at all?? I ask this because the pans are fluted.

I haven't made tarts in years. I used to help my gram make her family's butter tart recipe but I was so young, five and six? I have no recollection of how the pans were used.

Thank you in advance!!

Jennifer
