I need help! It has been about 5 years since I made this America's Test Kitchen/Cook's Illustrated Bittersweet Chocolate Mousse Cake and at that time I used the Ghirardelli Bittersweet bars. In the recipe ingredients section they say 12 ounces bittersweet chocolate (such as Hershey's Special Dark), chopped. I see in the supermarket the Hershey Special Dark chips but there is no mention of Bittersweet on the label, just "Mildly Sweet". Sure, I cold go ahead and buy the Ghirardelli brand bars again but I wanted to follow the recipe. I searched Google for Hershey's Special Dark but I want to make sure I am buying the correct chocolate. No Google searches on Mildly Sweet and Bittersweet come up with anything conclusive. If anyone is familiar with this recipe can you please help me out here? I want to make this Christmas Eve to bring as a dessert for Christmas. If all fails, I can certainly go back to what I used last time. The labeling is confusing. Thank you in advance!!
