Japanese Yuzu Lemon Pudding

For my final exam in my pastry class, I was given the assignment to make Japanese Yuzu Lemon Pudding. It is really lemony and oh-so-good.

I realize not many of you will make this, as the ingredients are listed by weight instead of volume. Sometime soon I'll try to convert it into a "regular" recipe with volume measurements.

JAPANESE YUZU LEMON PUDDING

656 g buttermilk

424 g sugar

104 g pastry flour (can use all-purpose flour)

8 eggs, separated

148 ml Yuzu lemon juice (can use regular lemons)

Zest of 6 lemons

1/2 tsp. salt

Pinch of cream of tartar

Mix buttermilk, egg yolks, zest, and juice. Add to the sifted flour, sugar, and salt.

In mixer bowl, whip egg whites until stiff (but not dry) with a pinch of cream of tartar; fold into the above mixture.

Coat 15-18 ramekins with butter and sugar and pour mixture into ramekins and bake in a bain marie (water bath) at 350° F. covered with a sheet pan for 25 minutes.

Remove sheet pan and bake an additional 10 minutes to color.

Serve immediately or may be served at room temp.
