It is one I made up years ago. Stuffed meatballs.
No measurements, just depending on how many you want to feed.

Lean Hamb. I would like to try ground chicken if I could find it around here. Don't like turkey, but ground turkey might work too.
Mix meat with a beaten egg, and/or bread crumbs, crushed Stuffing mix. Prepare the rest of stuffing mix according to directions, or make you own home-made.
Season meat mix with poultry seasoning and S&P. On a piece of waxed paper or parchment paper, measure out 1/2 c of meat. Pat into abt a 6" circle. Put a small mound of stuffing on the middle, and work meat up and around to cover the stuffing. Put meatball in a baking pan with the others. I have done different toppings depending on what I have around.....Cream of chicken soup thinned a little with milk & chkn broth or prepared chicken gravy mix. Pour over MB's cover and bake about 1 hr.

It's got to be Guy Fieri's recipe for chicken parmigiana. It's on the Food Network website. The chicken is brined first in water w/kosher salt (it doesn't end up tasting really salty, tho), and the chicken pieces are fried in oil for a crust before they go in the oven with some mozzarella.

It seems to waste a lot of breadcrumbs -- it calls for both regular breadcrumbs and Panko Japanese bread crumbs, and I think the amounts are too high, so I reduce them a bit.

But it's a tasty dish! I'm not much of a cook, but I prefer it over most Italian restaurant versions.

Rouladen, red cabbage, potatoes! YUM! German recipe. Cooked the meat yesterday morning... and will freeze in to one person portions today.

The evening meal with friends fell through after I had bought the groceries.

I love doing Thanksgiving dinner. I like all the prep work and the good old fashioned homestyle outcome. The turkey the stuffing,the side dishes everything about it.

if there is a chill in the air then especially I love to cook up a big pot of gumbo, but we love it anytime. For breakfast(on the weekend) we love boudin and fried eggs with toast.

Can't really pick one. Much depends on when (breakfast or "main meal"), weather, if it's for myself or many people, etc. Top ones:

- A big old country-style breakfast. Eggs, meats, potatoes, toast, sweet rolls, coffee, juice, milk...
- Pot roast, proper meatloaf or turkey breast.
- A good, properly prepared burger.

But for the most part, if it must be one, I'll probably go with ribs. Either country style (yeah, yeah, but if the pork boys wanna call 'em "ribs" that's good enough for me) or baby backs. Dry rubbed and slow cooked or braised 'till they's drop-apart tender and maybe served up with my d@mn good coleslaw and optional to put some spuds or rice with them, though being the carnivore I am, I'll often forgo the sides. Homemade fries are great as is a good hearty potato salad.

a big pot of chili......I love cooking chili ......and we love to eat it.

I make chili con carne, either in my crock pot or a big soup pot on the stove. We used to have pot lucks at work. Everybody made something. I'd make a big pot of chili-everyone raved about it, including a couple of southern cooks. I hate to admit, I "stole" the recipe from a book by James Beard. So I won;t post it here. Anyone can look it up.

I'm another who loves cooking Thanksgiving dinner. Turkey, dressing, gravy, mashed potatoes, deviled eggs, etc. Another favorite is pot roast with carrots, potatoes, onions. It was the first "company" meal I cooked as a newlywed.

My favorite dinner is one my mother cooked about every Sunday. I would love to be able to have it again. My chicken is pretty good, but hers was fantastic.

Fried chicken (brined--although she just called it "soaked in salt water. Pan fried, never deep fried)
Mashed potatoes
Gravy (made from pan drippings with lots of crunchies in it)
Green beans from the garden or home-canned
Sliced tomatoes from the garden
Yeast rolls (also homemade and yummy)
Banana cream pie (pie would change weekly, but almost always some kind of pie)

You are making me hungry. Oklamoni, I did not know what Rouladen, was so I googled it. Sounds yummy. Do you use flank steak to roll up the ingredients or use cabbage? I saw many versions of the recipe.

Glenda, do you bake the eggs in with the potatoes as for a casserole, or do you bake both separately?

This post has made me so dang hungry, I wish DH would get back from his errand...She said he was going to take me out tonite to eat. I am HUNGRY to the max!! LOL

My favorite meal to cook and eat is baked lemon pepper salmon, garlic mashed red potatoes (or sometimes baked), and steamed asparagus.

Lasagna
I make my sause in the crockpot and put it together in the evening. Let it sit in the fridge overnight and by the next day the noodles have absorbed the sause....tasty!
