What I Learned At Canning Class

I started canning after our wonderful CF canning camp several years ago. KatieC and Annie1992 were such knowledgeable instructors! Since then I have had some failures and was trying to understand what I had done wrong. I bugged our county extension office about offering canning classes; they said that there wasn't enough interest. I got an email last month saying they now have a schedule of canning classes so I signed up.

I learned:
I had too much head room in the jars; this allowed excess air which caused spoilage. Marmalade doesn't require much head room because of the amount of sugar.
I have a class cooktop which is a no-no for canning as the thermostat keeps adjusting so the glass won't crack therefore the boil isn't consistent.

I had successes but now I understand why I had those successes: 1) I used 1/2 pints and filled them more and 2) I picked the Murcotts from my DB's grove so I used his old stove to process several batches.
