Beef Brisket with Carmelized Onions and Cola

The cola tenderizes, browns and mingles with the brisket's juices to form a rich sauce. Making it the night befofre allows flavours to mignle and fat to solidify

3 tbsp olive oil

5 onions halved and sliced

4 lb brisket

salt and pepper

1 tsp paprika

1 cup cola

Pour oil into dutch oven big enough to hold brisket flat. Heat on medium-low. Add onions, and cook, stirring occasionally, until soft and golden, 30 minutes. Set aside.

Season brisket on each side with salt and pepper. Raise heat to medium-high, and brown well on both sides.

Arrange brisket fat side up. Sprinkle paprika, and drizzle cola gently over. Top with onions and their juice. Cover pot with foil, then the lid.

Place in preheated 350 oven. Braise 2 1/2 hours until meat is just tender, basting twice with liquid. Scrape onions from eat into the liquid. Transfer meat to large tub, pour contents of pot over. Cool. Cover with tight lid and refrigerate overnite.

The next day, remove meat to cutting board and slice thinly against the grain. Place in dutch oven. Skim fat off sauce and pour sauce into pot. Bring to boil on high, then reduce to low, cover and simmer 30 minutes. Remove lid and simmer 30 minutes until meat is very tender and juices reduced and thickened.
