Lasagna w/cheddar cheese?

Is that blasphemy? Want to make lasagna tonight and I have a whole brick of cheddar cheese in the fridge. Really want to use it up. So thinking of using the called for amount of cheese only with half mozzarella and half cheddar.

Is this just too much madness? I'm okay with the dish being a little different so long as its different in a good way. Thanks.

That sounds good. But the kids want lasagna. I may just have to either freeze the cheddar or make burritos Monday night. Thanks.

Food is so variable that I can't understand absolutes. I think it was on Top Chef recently that they featured the heretic who first did parmesan cheese five ways, incuding frico and foam, and he's now considered a king and his efforts seminal. There are somethings that are innovative and good, but called by ”wrong” names. I remember reading that Wolfgang Puck, when he first got into the frozen foods biz, ran afoul of government regulations which defined pizza as having tomato sauce. IIRC, they compromised for that particular pizza by adding sliced tomato, but eventually decided that Michelin star chefs should define their food, not regulators, so they rewrote the definition. or something like that. I think the controversy also helped by publicising that pizzas might not have tomatoes, thereby changing public expectations. The Italian woman who taught us lasagna also taught us the ragout. There's a very basic recipe with canned tomatoes (fresh can be used—they just cost more and take a lot more work— and dried herbs that is the framework. The unwritten part is dependent on season and what you can afford, plus cleaning the fridge. Maybe not peas (shudder), but pretty much any alium, brassica or umbellifer could find it's way in, as well as nightshades and squash. Sausage for the flavor, or other meat and more seasonings/herbs/spices etc., to make up for it. Over time I've learned that a green bell pepper is necessary for it to taste "right" (and oregano, of course), and that marjoram makes things taste like pizza. Otherwise, pretty mich anything goes and it ends up pretty much the same as a whole. And using the framework of what we call lasagna, the dish, I also make lasagne, the pasta, with a barbecue chicken profile, and a pumpkin one. Definitely American. Really good.

You know, you could make the lasagne with just the sauce and the cheese (and I don't like cottage cheese in white lasagne, I find it makes it taste sour) and serve steamed veggies on the side. You can go ahead and put the spinach in the dish (I love spinach in a white lasagne). I wouldn't puree any veggies for a white sauce. They would muddy the colour.

I agree on the 8 inch round pans for the coffee cake. For the casserole, butter your 8 by 11 dish very well, and pack in the frozen and well drained shredded potatoes....grate a little onion over the top...not a lot just about 2 teaspoons....enough to flavor it. Not sure what size the "packages" of hash browns are....but make the crust about 1/2 inch thick...pack the shredded potatoes in and then bake at 375 until lightly browned. That's your crust. then fill the dish with veggies of your choice...you will need 4 1/2 to 5 1/2 cups of veggies to fill the dish....and I would like a mixture of lightly sauteed onions, some red peppers, either roasted or from a jar, broccoli, maybe some cauliflower...both briefly blanched to soften a little...or previously frozen and drained, sliced sauteed mushrooms, maybe carrot buttons blanched, perhaps some dried or roasted tomatoes, maybe some water chesnuts. Just have enough veggies to fill the dish...I always have on hand a cam of sliced mushrooms and a bag of frozen broccoli in case I am short. toss with the shredded cheese and parsley and add all to the pan. Then mix up the eggs and milk...because you have used a potato crust you likely won't need all the 7 eggs and 3 cups of milk....more like 2 cups of milk and 5 eggs....with 2 tsps of worchestershire. Pour over the stuff in the pan////bake....and cool I think this recipe is better cooked right after making and reheated....rather than saving and baking later. Good luck!! Linda C

I used this recipe - with a few modifications, in parenthesis Tillamook, Beer and Bacon Mac and CheeseDescription: 2006 Tillamook Macaroni and Cheese Contest, Karen Harris - Denver, CO Regional Finalist Ingredients: 1 1/2 cups large macaroni 2 teaspoons salt, divided 2 tablespoons TillamookÃÂ® Butter (whatever I had in the fridge) 1 tablespoon light flavor olive oil 1 large shallot, finely minced (onion) 3 tablespoons all purpose flour 2 cups whole milk (one can evap milk, topped off with lager) 8 ounces TillamookÃÂ® Sharp Cheddar Cheese, shredded (Trader Joe's extra sharp shredded Cheddar) 1/2 cup dark beer (in addition to the 'topped off' evap milk) 6 slices precooked bacon, sliced into 1" pieces (not in this house) 2 teaspoons full strength, prepared stone ground mustard (YES I have a Sierra Nevada beer mustard!!!) 1 teaspoon garlic powder (fresh) 1 teaspoon black pepper, freshly ground Instructions: Preheat oven to 350 degrees. (nope, I just mixed the macaroni into the cheese sauce) In a large pot, over medium-high heat, bring two quarts water and 1 teaspoon salt to a full rolling boil. Gradually add macaroni and boil approximately 15 minutes or until pasta reaches desired tenderness. Drain. Melt butter and olive oil in a saucepan over medium heat. SautÃÂ© shallots in butter and olive oil for approximately 2 minutes or until they begin to turn transparent. Add flour to the pan, stirring constantly until a smooth paste forms. Stirring constantly, gradually add milk and continue cooking until mixture is thick and bubbly (mixture should coat the back of a spoon). Add 6 ounces of the cheese and stir until completely melted (I dumped all eight ounces). Remove from heat and add beer, bacon, mustard, garlic powder, pepper and remaining salt. Stir well. (I skipped this step as mentioned) Spray a 9Ã¢ÂÂ x 9" square glass pan with non-stick cooking spray. In the large pot, combine macaroni and cheese sauce and stir. Pour into 9Ã¢ÂÂ x 9" baking dish, cover with foil and place into preheated oven and bake for 15 minutes. After 15 minutes, remove foil and sprinkle the remaining 2 ounces of the shredded cheese and continue cooking, uncovered for another 15 minutes. Remove macaroni and cheese from the oven. Why not? Frankly I have done it.....and made pizza with a mix of cheddar and Swiss...
May not be traditional but I will guarantee it'll be good! Sort of like a layered baked goulash!

When I make lasagna I always mix cheeses. Usually several different kinds, whatever I have. If you like the cheese, go ahead and use it.

My mother always made a "casserole" of leftover spaghetti topped with cheddar cheese. She would mix the leftover pasta and sauce, put it in an appropriately sized rectangular casserole dish, and top it with a hearty amount of cheddar cheese. She then baked it until the casserole was hot and the cheddar was melted. As children, my sister and I loved it. Now my family loves it. The point of this long reminisce is I think lasagna made with cheddar cheese would be quite similar to Mom's spaghetti casserole. Go for it! Let us know how it works out.

Many years ago I was amazed to find out that you can make pizza with cheddar cheese if that's all you have -- and it tastes just fine! I learned that fact while I was snow-bound in a blizzard. We lived out in the country. The roads were drifted over and we couldn't get out for three days.

Put in any kind of cheese you have on hand, it will taste great.

I add Provolone, Cheddar, Mozzerella and Parmesan,
besides the Rigotta.

I use a 5 Cheese mix on Pizza and started some CF members
to use it also.

Now they sell a 5 Cheese mix and a Mozzerella , Provolone,
and Cheddar mix, for Pizza.

Thank you so much everyone. On the heels of all the above I am using grated Parm, cottage cheese, sharp cheddar and mozzarella. I will let you know how this ends up being received:)

Won't be "lasagna", but sure it'll be tasty! And as to kids... thinking they'd probably prefer cheddar to mozz??

Appreciate you all. I made two pans of the cheddar-infused lasanga last night and the whole house smelled wonderful. I'm actually re heating it for dinner tonight along with some homemade Rosemary bread. I admit I'm very curious to try it. Thanks.

My first thought was greasy, but then I realized it would probably be great, as it would be sort of like mac and cheese with a different noodle. The more I read the thread and people's responses, the better it sounded. Now I'm wanting some!

Hmm, despite all the responses I'm still not feelin' it. If anything I'd have probably gone for a Tex-Mex angle by adding chili type additions to to the sauce, and then used all cheddar.

There are times when thinking out side the box is good.

And necessity is the mother of invention.

Truth be known, I'd bet that there are a LOT
of our 'traditional' dishes that were the result
of situations very similar to yours.

My bet is that it's going to be delicious!

I made two big pans so I would say you're all invited. The only obstacle maybe that my husband was looking at one pan with a look of pure lust in his eye and that was at 9 a.m. this morning:) We may end up being mighty short on leftovers..,but that's a good thing.

Good evening everyone. Our family with the help of two friends demolished the pan of lasagna in under 15 minutes. And that was with lots of chatting and visiting going on. Home run. Thanks for all the great feedback.

Sorry Lou:) I didn't even get to have any except one bite off my husbands. It really went fast. So next time I may be even more crazy and try some of the other cheeses we like. That was a fun experiment. I loved hearing from all of you how you thought it might be.

Well, inspired by my own recommendation ;-) I made a "southwestern lasagna" tonight. The sauce was essentially peppers, onions, ground turkey, diced tomato, a couple cans of diced green chilis, chili powder, a few other spices and hot sauces to add some life... and then I layered no-boil lasagna sheets with the sauce, sour cream and cheddar cheese. Yum! DW told me to feel free to add it to the rotation.
