Why not? Frankly I have done it.....and made pizza with a mix of cheddar and Swiss...
May not be traditional but I will guarantee it'll be good! Sort of like a layered baked goulash!

I agree it will taste fine if slightly untraditional.

When I make lasagna I always mix cheeses. Usually several different kinds, whatever I have. If you like the cheese, go ahead and use it.

My mother always made a "casserole" of leftover spaghetti topped with cheddar cheese. She would mix the leftover pasta and sauce, put it in an appropriately sized rectangular casserole dish, and top it with a hearty amount of cheddar cheese. She then baked it until the casserole was hot and the cheddar was melted. As children, my sister and I loved it. Now my family loves it. The point of this long reminisce is I think lasagna made with cheddar cheese would be quite similar to Mom's spaghetti casserole. Go for it! Let us know how it works out.

Many years ago I was amazed to find out that you can make pizza with cheddar cheese if that's all you have -- and it tastes just fine! I learned that fact while I was snow-bound in a blizzard. We lived out in the country. The roads were drifted over and we couldn't get out for three days.

Put in any kind of cheese you have on hand, it will taste great.

I add Provolone, Cheddar, Mozzerella and Parmesan,
besides the Rigotta.

I use a 5 Cheese mix on Pizza and started some CF members
to use it also.

Now they sell a 5 Cheese mix and a Mozzerella , Provolone,
and Cheddar mix, for Pizza.

Thank you so much everyone. On the heels of all the above I am using grated Parm, cottage cheese, sharp cheddar and mozzarella. I will let you know how this ends up being received:)

Heck it's probably even better...HA! Ask my husband he'll tell you, everything is better with cheese any kind of cheese! HA!

I wager it ends up really well, and with the mix you described, flavorful and texturaly interesting.

Won't be "lasagna", but sure it'll be tasty! And as to kids... thinking they'd probably prefer cheddar to mozz??

Appreciate you all. I made two pans of the cheddar-infused lasanga last night and the whole house smelled wonderful. I'm actually re heating it for dinner tonight along with some homemade Rosemary bread. I admit I'm very curious to try it. Thanks.

My first thought was greasy, but then I realized it would probably be great, as it would be sort of like mac and cheese with a different noodle. The more I read the thread and people's responses, the better it sounded. Now I'm wanting some!

Hmm, despite all the responses I'm still not feelin' it. If anything I'd have probably gone for a Tex-Mex angle by adding chili type additions to to the sauce, and then used all cheddar.

There are times when thinking out side the box is good.

And necessity is the mother of invention.

Truth be known, I'd bet that there are a LOT
of our 'traditional' dishes that were the result
of situations very similar to yours.

My bet is that it's going to be delicious!

I made two big pans so I would say you're all invited. The only obstacle maybe that my husband was looking at one pan with a look of pure lust in his eye and that was at 9 a.m. this morning:) We may end up being mighty short on leftovers..,but that's a good thing.

Good evening everyone. Our family with the help of two friends demolished the pan of lasagna in under 15 minutes. And that was with lots of chatting and visiting going on. Home run. Thanks for all the great feedback.

Sorry Lou:) I didn't even get to have any except one bite off my husbands. It really went fast. So next time I may be even more crazy and try some of the other cheeses we like. That was a fun experiment. I loved hearing from all of you how you thought it might be.

Well, inspired by my own recommendation ;-) I made a "southwestern lasagna" tonight. The sauce was essentially peppers, onions, ground turkey, diced tomato, a couple cans of diced green chilis, chili powder, a few other spices and hot sauces to add some life... and then I layered no-boil lasagna sheets with the sauce, sour cream and cheddar cheese. Yum! DW told me to feel free to add it to the rotation.
