Sweet Bacon Crackers

Original Recipe Yield 30 crackers

Ingredients

36 buttery crackers such as Keebler ClubÃ¯Â¿Â½ Crackers

12 slices bacon, cut into thirds

3/4 cup packed light brown sugar

Directions

Preheat the oven to 250 degrees F (120 degrees C). Line two rimmed cookie sheets with aluminum foil.

Arrange crackers on the prepared cookie sheets in a single layer. Place a piece of bacon on top of each cracker, then put about a teaspoon of brown sugar on top of the bacon.

Bake in the preheated oven until bacon is browned and crackers and bacon are glazed, about 45 minutes. Drain on paper towels before serving.

I'm making this for dessert tonite. I've made it before and it's delicious and easy!

Roasted Caramel-Glazed Apples (Sue_Va)

3 tbsp butter
4 firm, crisp apples; halved and cored
1/2 cup brown sugar
2 tsp cinnamon
chopped walnuts

Heat oven to 357F

Place butter in 13x9 baking pan and melt. Combine cinnamon, brown sugar and nuts and sprinkle over the butter.

Place apples cut side down and bake until apples are tender; 20 minutes. Turn apples and spoon sauce over top. Bake 5 more minutes until apples are golden brown.

Let cool slightly and serve with whipped cream or ice cream.

Jasdip, I've seen recipes for pork roast with cranberry sauce cooked (I think in a crockpot). After the roast cooks, you thicken the sauce with corn starch. I haven't made it, but it sounds good. Have you tried the Ocean Spray website? They may have recipes there. I love cranberry sauce! Haven't tried this, but anything with Ritz crackers is great in my book. TOFFEE BITES (Kitchen Trials) 1 box Ritz crackers (225g) 1 bag Werther's Original Hard Candy (180g) 1 can sweetened condensed milk Preheat your oven to 350F with a rack in the middle position. Line a rimmed baking sheet with a mat or parchment paper.Unwrap the caramels, place in a zip lock bag, and use a rolling pin to break into small pieces. Do the same to break the crackers into small pieces. Put the broken crackers, caramels, and condensed milk into a medium bowl and mix well with a fork.Dump the mixture on the the prepared baking sheet, and use a spatula to spread out to an even, 1/2" thickness. Bake for 15 minutes. While the bites are baking lay a sheet of parchment paper on your counter. Dump the cooked mixture onto the parchment, and as it cools use two spoons to break it up into bite size pieces. Let cool completely before eating.

Harry wants me to make this. You can buy lemon curd but I saw it being made on Nate Berkus the other day. Sure is easy enough to do at home. LEMON COCONUT POKE CAKE (Taste and Tell) 1 (16.25-oz) white cake mix 1 (14-oz) can sweetened condensed milk 1 (15-oz) cream of coconut (usually found with the drink mixers) 2 cups lemon curd 1 (16-oz) container frozen whipped topping, thawed (such as Cool Whip) 2 cups sweetened coconut Prepare the cake according to package directions. While still hot, poke holes through the top of the cake with a skewer. In a bowl, mix together the sweetened condensed milk and cream of coconut. Pour over the warm cake. When the cake has cooled, spread the lemon curd over the top of the cake. If not serving right away, refrigerate. When ready to serve, top with the Cool Whip and then sprinkle with coconut. LEMON CURD (Nate Berkus website) 3/4 cup granulated sugar Grated rind and juice (1/3 cup) of 2 lemons 1/2 cup butter 3 eggs, beaten Put all ingredients in the top of a double boiler, over hot water. Stir until mixture is well blended and begins to thicken. This takes only a few minutes; it will continue to thicken as it cools. I don't know if this would be considered candy or cookies, but the picture looked delicious! ALMOND JOY BARS (adapted from Just a Pinch Recipe Club) 1 stick, 8 Tbsp, unsalted butter, at room temp 3/4 cup all purpose flour 3/4 cup coconut flour (you can substitute regular flour) 1/3 cup brown sugar, packed 14 oz can sweetened condensed milk 14 oz, (2 bags) sweetened coconut 1 tsp vanilla extract whole almonds 12 oz bittersweet baking chocolate squares, roughly chopped (or semi-sweet or milk chocolate) 1 Tbsp shortening (Crisco) Preheat oven to 350. Line a 9x12 baking dish with foil that hangs over the edge (for easy removal and cutting) and spray with cooking spray. To make the crust blend the butter and sugar with the flours in a bowl using your fingers until the butter is thoroughly incorporated and the mixture is crumbly. Work it for several minutes so that there is no loose flour left. Press the crust onto the bottom of the pan, using the back of a measuring cup to press it firmly and evenly. Bake for 5 minutes. In a bowl mix together the coconut, condensed milk and vanilla. Spoon the mixture over the crust and spread out gently so you don't disturb the crust too much. Press almonds gently onto the surface of the coconut. Put the chocolate and the shortening in a glass measuring cup. Heat it in the microwave in 30 second increments, stirring in between, until it is just melted. Stir until smooth. Don't over heat. Working quickly, pour the chocolate over the coconut, spreading it out smoothly. Refrigerate for about 2 hours or until firm. Cut into squares.

Yum, Luckygardner! Canadian Living has good recipes and cookbooks! I'm going to try this easy pasta dish with tuna. Easy Tuna Penne (RecipeLion) Serves: 6 1 box uncooked Penne 1 1/2 tablespoons olive oil 1 small onion, chopped 3 cloves garlic, minced 1 (14.5 ounces) can crushed tomatoes in juice 1 1/2 tablespoons chopped fresh parsley 1 tablespoon fresh lemon juice 1 tablespoon capers, drained (optional) 1/4 teaspoon to 1/2 teaspoon crushed red pepper flakes 2 (5-ounces) cans water-packed tuna, drained Cook pasta according to package directions. Drain and return to pan. Meanwhile, heat oil in large skillet over medium heat. Add onion and garlic; cook 1 to 2 minutes until onion becomes translucent, stirring constantly (watch carefully so garlic does not burn). Stir in tomatoes with juice, parsley, lemon juice and capers. Cook 1 minute; add red pepper flakes to taste. Reduce heat to medium-low; cook 3 to 5 minutes to thicken sauce, stirring frequently. Gently stir in tuna; heat through. Serve pasta in 6 bowls, and top with sauce.

Glad you have your 'puter back, Luckygardnr! Paula Deen has a similar recipe for the bacon crackers except she puts a tsp. of Parmesan cheese on the cracker and then wraps in bacon.

Harry would really like those apples, Jasdip. I'll have to try them. Should that be 375 degrees?

I'm making this for dinner tonight to test it before I make it for next Monday's brunch. I've had the recipe forever. Got it from another site that had great forums.

Chicken-Pecan Quiche (DebbieD/Alabama)

1 c. flour
1 c. (4 oz.) sharp Cheddar cheese, grated
3/4 c. pecans, chopped
1/2 tsp. salt
1/3 tsp. paprika
1/3 c. vegetable oil

Combine first 5 ingredients in a medium bowl; stir well. Add oil. Stir well. Firmly press mixture in bottom and up the sides of a 9" deep-dish pie plate. Bake at 350 for 12 minutes. Cool completely.

1 c. sour cream
1/4 c. mayonnaise
3 large eggs, lightly beaten
2 c. cooked chicken, finely chopped
1/2 c. (2 oz.) sharp Cheddar cheese, grated
1/4 c. minced onion
3 drops hot sauce (optional)
1/4 c. pecan halves

Combine sour cream and next two ingredients; stir with a wire whisk until smooth. Stir in chicken, 1/2 c. cheese, onion and hot sauce. Pour into prepared crust. Arrange pecan halves over chicken mixture. Bake at 350 for 55 minutes or until set. Let stand 10 minutes before serving. Yield: 8 servings.

Note: You can substitute any deep-dish pie crust. Just sprinkle the bottom of the crust with 1/2 c. shredded cheese and add the whole cup of cheese and pecans to the chicken-sour cream mixture. Prebake the pie crust 10 minutes.

In reading my recipe, I see that the temp reads 357F.
Cook it at 357, not 350, nor 360 but 357!! LOL

Nah, it's my fingers playing tricks on me. Should be 375 degrees.

I make these with cheese crackers from Dollar Tree

Taco Crackers

2 7 oz boxes cheese crackers
5 tsp taco seasoning
1 tsp each
garlic powder
oregano
chili powder
1/2 cup oil (less than 1/2 cup)
Stir seasonings with oil
Pour over crackers in plastic bag
Mix thoroughly
refrigerate overnite
turning several times
Let reach room temp before serving

Well, we just had dinner and I made the apple dessert! OMG! It was soooooo goooood! And so easy to make! Try it, everyone...you'll not regret it!

When I saw this I wondered if I had posted the recipe incorrectly, so I went back and looked at it in my recipe folder.

Actually here is how I have it.

ROASTED CARAMEL-GLAZED CINNAMON APPLES

3 Tbls butter
4 firm, crisp apples, halved and seeded.
Ã¯Â¿Â½ cup brown sugar
4 cinnamon sticks (about 4 inches each) halved, or mix 2 tsps ground cinnamon with the brown sugar.

With oven rack in middle position, heat to 400Ã¯Â¿Â½. Place butter in 13 x 9 inch baking pan to melt.

Sprinkle brown sugar over the butter and arrange cinnamon sticks evenly over the sugar. Place apples, cut side down over sticks, or evenly over the sugar. Bake until apples are tender, about 25 minutes. Turn apples over and spoon sauce over apples. Continue to bake about 5 minutes or apples are golden brown. Let cool slightly. Serve a half apple in each bowl, sticking a cinnamon stick in each core.

Since some of you have made them and they turned out good, guess it doesn't matter much.
