Got some jam hanging around...

last years batches?? Didn't really like it on toast?

This is what I make to get rid of it. LOL

It's one of my Grandmothers.

As written.

my notes

Jam Fruit Cake

6 eggs

2 c sugar

1 c butter or marg

4 c sifted flour (I don't sift!)

6 T buttermilk

2 c flavored jam

1/2 pkg dates

2 t cinnamon

2 t nutmeg

2 t cloves

1 t allspice

2 t baking soda

1 box raisins

2 c walnuts

Cream butter and sugar.

Add eggs one at a time, beating well.

Add jam.

Add buttermilk with soda in it.

Add flour(reserve a bit to toss the dried fruit in) & spices. Mix well.

Dredge the fruit and nuts in some of the flour, mix in. Pour into a large angel food cake pan lined with wax paper.

Bake at 275F for 2 1/2-3 hours.

I bake in mini loaf pans. I use whatever combination of nuts and fruits(about 3-4 cups) I have. I especially like it with dark/purple jams. Usually Blackberry..LOL I do bake it at 325F in the mini loaves for about an hour.
