Brainstorming needed~marshmallows

I blew it..I know have several cups of airy vanilla sugar syrup!

I used a clear "gelatin" or so I thought..It's actually an unflavored gelatin mix. So much for saving a few cents!!!

What do you think I could do to save it..It's basically a glorified corn syrup now...I made the full recipe of Michelle's shared recipe of marshmallows..'cept I'm getting NO stiff or fluff!

My mom thinks I should bloom out a bit of Knox and try adding that, and rewhipping. I think I need to use it in pecan pie!!!!

What would you do?

I might be tempted to try your mom's suggestion and add some Knox gelatin.

I made marshmallows earlier this year and i remember the mixture has getting really fluffy.

And I used the leftovers to sandwich between fudge.

Thanks Ann..I'm going to try a half batch with the Knox..I have 3 envelopes...so can do that..
Then if it was truly the gelatin mix and not ME..I'll have to pop into the store and pick up some more Knox.

    Maple marshmallow fudge...How sinful!!!!

I think I'll just keep my quart of thick vanilla syrup for other things...I'm askeered to add more to it. LOL

    It worked beautifully..
now I just need to work on my quart of stuff. LOL

This is an awesome project. I have made marshmallows sever times in an attempt to get good at it because I really want my grandbabies to say "My Gammy makes marshmallows for me". You see the "other grandmother" is really talented and always makes something for the babies, like this skunk costume for Halloween. I know it's a stretch--marshmallows vs skunk costumes, but hey, I do what I can...

    Rita, it's really sticky...but maybe..

Another marshmallow thread! Yay! I posted a question on the other thread. After seeing msafirstein's marshmallows, I tried these out. They were delicious. I had a lot of trouble dipping them. They melted all over the place and I got big globs. I used an 8 by 8 pan as suggested. Waited 12 hours for them to firm up. Cutting them was a bit of a mess. Used a bench scraper and lots of powdered sugar. Then I made a batch using a 7 by 11 pan. Same thing. Perhaps the marshmallows do get firmer in the 13 by 9?

    Main questions:

    How firm were your marshmallows?
    How did you cut them?
Any dipping technique hints? I did use a marshmallow dipping tool.

Thank you. I would LOVE to try this again!! (I bought way too much Knox...need to use it!!)

Oops, I must have missed your question on the other thread.

Both batches of my marshmallows firmed up nicely, about as firm as the store bought marshmallows.

I cut mine with kitchen shears and I ran them under hot water and dried them for each cut.

I did not even know about a marshmallow dipping tool, what does it look like? I just used 2 bamboo skewers to dip mine. When I just used 1 skewer the marshmallow spun around and with 2 skewers you had a bit more control. If the marshmallows are melting then you are taking too long to dip them. Dipping should just take a few seconds.

BTW, Walmart was the cheapest for the Knox Gelatin, about half of what the grocery store wanted!

DD & I made these last weekend using a recipe from Martha Stewart website. The recipe called to dip them in a homemade fudge but we just dipped them in dark chocolate. They were easy to do and totally decadent to eat. DD made another pan of marshmallows last night and is going to dip them today.

Thanks! I guess I wasn't as quick at dipping them as I thought I was! I used a marshmallow tool...two prongs on the end...so I avoided the marshmallow roll! I did just dip them and pull them out. I think my marshmallows were not as firm as they should have been. I'll try again!

    Thank you!

I cut them with my chefs knife. Had them right on the parchment laid on top of a cutting mat. Then rolled them quickly in the sugar/flour mixture. They were easy. I haven't tried dipping them yet. Need more chocolate. LOL
I was going to use a fondue fork to dip..

Current "resting" batch is dusted in whizzed candy canes/p. sugar/rice flour. I'll cut them tomorrow.

I still have my quart of mistake from yesterday. I'll heat it up, and bloom some Knox. I bought a 32 packet box today for 7.75. Versus 4 packet box for 2.19. Now I have LOTS of Knox..LOL
I might be able to salvage my mistake..

Oh and BTW for pans..for the half batch I used a loaf pan and part of my 11x7 pan. Today for a full batch I split between two 9" square aluminum/foil cake pans..perfect size! Just make sure to either oil the pans very very well..or line with oiled parchment..I had a little sticking..but not to bad on the oiled foil.
