Bypass the reset in the water heater

Hello,

I have a difficult question to ask, and I would appreciate if anybody can help.

Last year I have installed a hot water solar panel, which uses the water heater as a reservoir tank (50 Gal).

Because I live in South Florida, when we get a clear blue sky day, and the hot water consumption at home is not much, the solar panel can heat the water at more than 170F.

Because of this, the reset button which is installed in every water heater, switches off the electricity.

The problem comes when we get few days without much sun. Then the solar panel does not heat the water too much, and the water heater does not work, since the reset button has switched off the whole thing.

As you know this is very inconvenient since I need to unscrew the small window on the heater and push the reset button.

Is there anybody who can tell me how to bypass it, so it does not switch off the heating elements anymore?

I know, it is a risk, since if the thermostat breaks, I could overhear the water and create an issue.... but I am happy to run the risk, since the heater is brand new.
