Lindac, I need a recipe

I can't find the recipe that you have posted for a pineapple side dish that goes with ham. I think it may be called Scalloped Pineapple. I've made it before and loved it but it is MIA.

I'm craving it to go with my ham tomorrow.

Noodle kugel

Noodle kugle serves 20 as a side
1 pound cooked noodles (cook lightly so they don't get gluey)
1 20 oz can pineapple, drained (save the juice...add a little if the cheese and egg mix seems to thick)
1 carton cottage cheese 16 oz
2 beaten eggs beaten with
8 oz cream cheese
1 cup sour cream 1/2 cup sugar
1/2 tsp vanilla
Mix all and top with cornflake crumbs and sprinkle with cinnamon sugar and drizzle with 1/2 stick of melted butter..bake 350 for 45 minutes.

Don't tell all the good Jewish cooks you are serving this with ham! I got it from my DIL's Hadassa cookbook! LOL!
But I think it really compliments a ham.....and there are no calories in it...none at all!

Thanks Linda. That's not the one I was thinking of though but hey, that sounds good.

I was thinking it had some bread crumbs, cream, sugar, pineapple, etc.

This is the one I have saved from Linda - hope it is what you are looking for! Donn's Delight 4 oz Maytag blue crumbled 1 cup of mayo ( I use Kraft) 3 oz ( about 1/3 cup) milk or cream 2 tsps sugar 2 tsps dried parsley 1 1/2 Tablespoons lemon juice 1 1/2 Tablespoons cider vinegar 1 Tablespoon fresh grated onion 2 Tsp Lee and Perrins worchestershire 1 tsp horseradish 1/2 tspoon garlic powder. Mix gently so as to leave some lumps, and serve over a green salad or on sliced tomatoes or cukes and onions or as a dip for raw veggies. Serves about 6 to 8

A sourdough is a preferment from wild yeasts. But you can make a simple one 24 hours in advance with packaged yeast or you can just pull off old dough from each batch and use it in subsequent doughs. Old dough is the traditional French way for baguettes where they bake every day but a country miche might have a sourdough. The point is to have dough with fully matured and abundant live yeasts and that doesn't happen in a 4 hour cycle. Regardless of how many "instant" products there are on the market the ideal for bread is s-l-o-w. That's how flavors and vigorous yeasts are nurtured. The recommendations about a slack dough are also right on point.

There's a woman I work with who regularly comes across as being very abrasive, both in speaking and in writing. She has acknowledged to me that it is something she has struggled with all her life, and when she tries to sound nicer people think she's being insincere or passive-aggressive. Some people just can't help it. Fortunately I've learned to work around it and generally not let it affect me, as this woman also happens to be one of the most knowledgable people on my team. Others can't get past it. Once in a while I feel the need to smack her back, figuratively, and we move on. As with Linda, there are times I can't help but think she's doing it intentionally. As with Linda she's not always right. As with Linda, there are others around who are knowledgable and could come to the same conclusions, but perhaps not as quickly and efficiently. As with Linda, I often cringe when she opens her mouth. As with Linda, there are people who go through great lengths to try to have her "taken care of." Unlike GW with Linda, fortunately my employer values her contributions and keeps her around.

Here you go and all you have to do to get Ann's wonderful cookbook is ask her. She shares. You might try emailing through GW. Tracey Bagels ====== Source: Hors d'oeuvres Cook Book. I have typed it exactly how the recipe is printed in the book. If you have a bread machine or kitchenaide by all means use it to do most of the kneading. I always like to finish the kneading by hand. You can also make these in to normal size bagels. I have used this recipe for over 20 years. I have tried other recipes but this is my favourite one. 2 cups warm water 2 packages active dry yeast 3 tablespoons sugar 1 tablespoon salt about 5 3/4 cups all-purpose flour, unsifted 3 quarts water with 1 tablespoon of sugar Cornmeal 1 egg yolk beaten with 1 tablespoon water about 2 tablespoons poppy or sesame seeds. . Stir together water and yeast in large bowl of electric mixer; let stand 5 minutes to soften yeast. Stir in the Sugar and Salt. Gradually mix in 4 cups of the flour and beat at medium speed for 5 minutes. With a spoon, stir in about 1 1/4 cups more flour to make a stiff dough. turn out on a floured board and knead until smooth, elastic, and no longer sticky, (about 15 minutes); add more flour as needed to prevent sticking - dough should be firmer than for most other yeast breads. Place in a greased bowl, cover, and let rise in a warm place until almost doubled ( about 40 minutes to 1 hour). Punch dough down and divide into thirds. Set 2/3 of dough aside on a floured board; cover with clear plastic. form remaining 1/3 dough in a log and cut into 16 equal pieces. To shape, knead each piece into small ball and poke thumbs through centre. With one thumb in hole (hole should be at least 1/2 inch) work fingers around perimeter, shaping ball into a small donutlike shape about 1 1/2 inches in diameter. Place bagels on a floured board or tray and let stand 20 minutes. Bring water-sugar mixture to a boil in a 4 to 5 quart pan; adjust heat to keep it boiling gently. Lightly grease a baking sheet and sprinkle with cornmeal. Lift bagels carefully and drop into water (about 6 at a time) boil gently for 1 minute turning only once (30 seconds each side). Lift out with slotted spoon and drain very briefly on paper towels, and place on baking sheet. Brush with 1/3 of the egg yolk glaze, sprinkle with seeds and bake in a 400Â° oven for 20 minutes or until richly browned. cool on racks. Repeat with remaining 2/3 dough (you may need to punch it down before shaping,) working with 1/3 at a time. Makes 48 cocktail size bagels.

Scalloped Pineapple - Marilyn Cole
(An excellent accompaniment to your Easter ham.)
1/2 cup melted butter
4 cups fresh bread cubes
3 eggs
1/2 cup brown sugar
1/2 cup white sugar
1/2 cup evaporated milk
20 oz. crushed pineapple in juice; do not drain
cinnamon
Combine bread and butter, set aside. Combine eggs, sugar and evaporated milk; beat with mixer. Add bread mixture and pineapple, stir well and pour into lightly greased 2-quart casserole. Sprinkle with cinnamon. Bake uncovered at 350 for 1 hour or until set.

Glenda has a pineapple casserole recipe that many seemed to enjoy. I'm not a pineapple lover but maybe someone else has it.

I'm sure it used bread cubes and pineapple and eggs and brown sugar.....

It's probably Marilyn's but I did find Glenda's.

Glenda's Baked Pineapple Casserole

1 (20-ounce) can pineapple chunks in juice
1/2 cup sugar
3 tablespoons all-purpose flour
1 cup shredded cheddar cheese
1/4 cup butter or margarine, melted
1/2 cup crushed ritz crackers

Drain pineapple, save 3 tablespoon of juice.
Combine sugar and flour; add cheese, pineapple and pineapple juice. Mix well. Put in greased 8 x 8-inch baking dish.
Mix crushed crackers and melted butter together; sprinkle over pineapple mixture.
Bake for 30 minutes at 350*F (175*F)
Serves 6

I think the recipe from Chi83 is what I was thinking. I think I'll try it.

Glendas recipe is also one that I know I have made and I know it was good.

This is one from my funeral lunch notes. Once after a funeral lunch where I served this, a week a stranger stopped me on the street and said..."Aren't you Linda C?" I replied that I was.....and she said she was talking to a fried who had been at so and so's funeral and said she had eaten a wonderful pineapple casserole and thought I was chair of the lunch committee and was wondering if I would share the recipe! LOL!

I made 4 pineapple casseroles each containing a #10 can of drained pineapple, about 3/4 cup of juice 1/2 cup white sugar, 1/2 cup brown sugar, 2/3 cups flourÃ¯Â¿Â½.and about 3 cups shredded cheddar cheese, topped with cornflake crumbs and about 2/3 cup melted butter.
Baked for 40 minutes at 375. Serves about 20

Bet this is what you want!

Pineapple Bake from The Silver Palate
8 thick slices day-old bread cut into 1" cubes
2 cups drained crushed unsweetened pineapple
ÃÂ½ cup (1 stick) unsalted butter
ÃÂ¾ cup brown sugar packed
4 eggs beaten
Preheat oven to 350ÃÂ°F. Grease a 1 ÃÂ½ qt baking dish.
Combine the bread and pineapple and place in the prepared baking dish.
Mix the butter, sugar and eggs and pour over the bread mixture.
Bake until puffed and golden about 40 minutes. Serve immediately.
