Beef shank too expensive for soup!

ginjj

I want to make a vegetable and bean minnestrone. The recipe calls for 6 lbs of beef shank. 4lbs to be used in the stock and 2 in the actual soup. I just priced them at a chain grocery store and they are $3.99 a pound. 6 lbs would be $24.00. A bit much for soup I'd say.

I know I could substitute another things for the beef shank but I do want to make the best tasting soup I can.

What do you suggest I use or should I bite the bullet and enjoy my expensive soup.

I got the recipe out of Sunset Magazine.

Thanks

Ginny
