I'm having company tomorrow for supper, have a couple pounds of oxtails in the frig and wanted to make a soup/stew.
Most of the recipes I've looked at are basically the same as a short rib dinner that I've made recently, you know, the celery, carrot, red wine reduction...
I used to be able to get the packaged Knorr Oxtail soup mix, it added a nice silky mouth feel but can't find it anymore.
I would very much appreciate your recipe or technique :)
Deborah, I love oxtails. Although I have a number of recipes for oxtails, I tend to just wing it.
I made them a week or two ago and this is what I did. I browned the Oxtails in small batches so that they browned and didn't steam. Remove from the pan and added slided onions. Browned the onions and added a head of peeled garlic cloves, and one chopped carrot. YOu can add more carrots, but I don't like the sweetness that carrots add so I only used one. Pour in some red wine, beef broth, chopped fresh rosemary, salt, pepper and a squirt of tomato paste (I keep a tube of tomato paste in the fridge) cover and simmer until the oxtails are tender. Remove the oxtails from the liquid. Skim off fat, and then using your stick blender, puree the liquid with the vegetables to thicken the sauce.

This Spanish recipe is the first one I made that got me hooked on Oxtails. Probably 25 years ago. Served them the first time at a Spanish Wine and Food theme dinner party.

Spanish Oxtail Stew (Rabo De Toro A La Andaluza) ================================================ Source: The foods and Wines of Spain. Peneloope Casas
3 1/2 to 4 pounds oxtails 1 medium oinion in thick slices 2 carrots scraped and cut in thick slices 2 sprigs parsley 2 bay leaves 1/2 teaspoon thyme 1/2 stalk celery salt fresh ground pepper 2 tablespoons olive oil 3 cloves garlic 3 tablespoons chopped cured ham 1 medium onion chopped 1/2 teaspoon paprika 2 tablespoons flour 1 cup dry white wine . Trim some of the fat from the oxtails. Place them in a deep casserole and barely cover with water. Add the onion slices, carrot slices, parsley, 1 of the bay leaves, thyme, celery, salt and pepper. Bring to a boil, skim off the foam,cover and simmer 3 hours. Remove the oxtails to a warm platter and reserve 1 cup of the cooking liquid, skimming off the fat. Keep the rest for future use as stock or soup. Wipe out the casserole.
Heat the oil in the casserole and slowly saute the garlic, ham, chopped onion, the other bay leaf and the paprika until the onion is wilted. Stir in the flour, then the wine and the reserved 1 cup of cooking liquid. Cook until smooth and thickened. Return the oxtails to the casserole, taste for salt and pepper, then cover and cook 1 hour more.
I like to serve these with garlicy mashed potatoes, potenta or risotto.

5 Pound oxtails, cut into thick pieces 6 Tablespoon virgin olive oil 2 Medium red onion, cut into 1/2 inch dice 2 carrots, cut into 1/2inch rounds 2 ribs celery, cut into 1inch pieces 2 cups Barolo wine 2 anchovy fillets, rinsed and patted dry 2 Cups chicken stock 2 basic tomato sauce, recipe follows 1 Bunch rosemary . Place oxtails in cold water and bring to a boil. Lower heat and simmer 30 minutes. Drain and cool. In a thick bottomed Dutch oven, heat oil until smoking. Place onion, carrots and celery in pot and cook until golden brown, about 10 to 12 minutes. Add wine, anchovy, chicken stock, tomato sauce and rosemary and bring to a boil. Add oxtails to liquid, cover and bring to a boil. Lower heat to simmer and cook 11/2 hours or until fork tender. Serve with soft polenta.

Ann, they were a HUGE hit :) My friends had never eaten them before. It was a bit humorous when my girlfriend asked what they were... her reaction was priceless, I know she meant no harm, yet her face said it all LOL! But of course after tasting them we've got a new convert :) I pretty much followed your "winging" it recipe, except added some cubed red potato and a handful of carrot coins, slightly thickened it with butter/flour mixture and served it as an oxtail stew. Next time, I'd like to try either one of the recipes you posted...which one, hmmmmm. Thanks for the help!
